.%3C/p%3E%3Cp%3ELet%E2%80%99s%20just%20say%20I%E2%80%99ve%20missed%20blogging.%20%20Because%20while%20I%E2%80%99ve%20been%20baking%20away%20I%20haven%E2%80%99t%20had%20any%20time%20to%20take%20photos%20(with%20my%20new%20lens%20%E2%80%93%20which%20now%20makes%20my%20camera%20completely%20old%20and%20completely%20manual%20and%20completely%20ah-MAZ-ing)%20or%20write%20up%20the%20recipes.%3C/p%3E%3Cp%3EBut%20I%20have%20still%20enjoyed%20reading%20YOUR%20blogs!%20And%20if%20there%E2%80%99s%20one%20thing%20I%E2%80%99m%20learning%20from%20the%20holidays%20approaching%20it%E2%80%99s%20to%20sit%20and%20have%20a%20breather%20now%20and%20then,%20to%20drink%20more%20water,%20watch%20my%20sweets,%20and%20to%20enjoy%20the%20little%20moments.%20%20To%20give%20thanks.%20%20Gracias%20to%20my%20life%20coach,%20Lindsay%20at%20Rosemarried%20and%20the%20murder-sprees%20on%20American%20Horror%20Story%20and%20Boardwalk%20Empire%20for%20reminding%20me%20of%20this%20lately.%3C/p%3E%3Cp%3E(And%20yes,%20I%20work%20with%20a%20life%20coach%20and%20YES%20it%E2%80%99s%20awesome.%20%20Like%20having%20a%20boss,%20an%20assistant%20and%20a%20mirror%20all%20in%20one.%20%20Stuff%20is%20getting%20DONE%20in%20Dusty%20Baker%20Land).%3C/p%3E%3Cp%3E(Oh,%20and%20speaking%20of%20giving%20thanks,%20if%20you%20want%20to%20win%202%20copies%20of%20an%20awesome%20gluten-free%20cookbook%20(one%20to%20keep%20and%20one%20to%20give)%20and%20a%20copy%20of%20a%20regular%20cookbook,%20check%20out%20the%20ThanksGiveaway).%3C/p%3E%3Cp%3ENow,%20end%20of%20the%20rambling%20and%20onto%20the%20donuts.%3C/p%3E%3Cp%3ESometimes%201st%20time%20is%20a%20charm.%20%20I%20didn%E2%80%99t%20quite%20believe%20that%20when%20making%20these%20so%20tried%20two%20more%20times,%20concluding%20that%20my%20first%20go%20was%20by%20far%20my%20favorite.%20%20In%20each%20recipe%20I%20adjusted%20a%20bit%20here%20and%20there%20%E2%80%93%20kind%20and%20quantities%20of%20flours,%20amount%20of%20leveners%20etc.%20%20I%20knew%20that:%3C/p%3E%3Cp%3EI%20wanted%20them%20to%20be%20high%20in%20fiber%20/%20whole%20grain%3C/p%3E%3Cp%3EI%20wanted%20them%20to%20be%20vegan%3C/p%3E%3Cp%3EObviously%20gluten%20free%3C/p%3E%3Cp%3EEasy%20to%20assemble%3C/p%3E%3Cp%3EI%20wanted%20them%20to%20be%20moist%3C/p%3E%3Cp%3ECheck,%20check,%20check,%20check,%20check.%3C/p%3E%3Cp%3EI%20brought%20the%20batch%20upstairs%20to%20some%20neighbors:%20we%20all%20have%20dogs%20and%20now%20and%20then%20gather%20for%20walks,%20a%20glass%20of%20wine%20or%20some%20delicious%20food.%20%20One%20is%20a%20private%20chef%20and%20the%20other%20is%20just%20really%20good%20with%20food,%20so%20they%E2%80%99re%20great%20to%20run%20recipes%20by.%20%20The%20chef%20remarked%20that%20the%20flavor%20was%20%E2%80%9Cperfect,%20perfect,%20perfect%E2%80%9D.%20%20But%20he%20had%20no%20advice%20as%20to%20how%20to%20get%20them%20to%20taste%20chewier,%20like%20a%20real%20donut.%20%20Because%20while%20these%20do%20taste%20amazing,%20the%20texture%20is%20more%20like%20a%20moist%20cake%20than%20a%20donut.%20%20Making%20them%20gluten%20free%20and%20vegan%E2%80%A6%20gonna%20be%20hard%20to%20get%20the%20chew.%20%20I%E2%80%99m%20still%20working%20on%20it,%20but%20let%E2%80%99s%20just%20say%20that%20these%20are%20a%20delicious%20take%20on%20a%20classic%20donut.%20%20Their%20guests%20noted%20that%20the%20pumpkin%20flavor%20was%20full%20throttle,%20the%20texture%20was%20soft,%20the%20flavor%20balance%20was%20perfect%20and%20they%20might%20even%20fare%20well%20after%20a%20day%20or%20two%20of%20drying%20out%20a%20bit.%20%20I%20didn%E2%80%99t%20take%20any%20home%20with%20me%20%E2%80%93%20so%20they%20were%20a%20hit.%3C/p%3E%3Cp%3EFor%20this%20recipe:%3C/p%3E%3Cp%3EI%20recommend%20having%20all%20ingredients%20at%20room%20temperature%20or%20slightly%20warm.%20%20Like%20a%20basic%20cake%20recipe,%20you%20want%20the%20ingredients%20to%20meld%20slowly%20and%20not%20be%20shocked%20into%20expanding%20and%20then%20collapsing.%3C/p%3E%3Cp%3EThis%20recipe%20does%20NOT%20use%20xanthan%20gum.%20%20I%20usually%20do,%20in%20everything.%20%20But%20with%20this%20I%20found%20the%20absence%20of%20it%20made%20for%20a%20better%20texture%20given%20the%20amount%20of%20starch%20in%20the%20recipe%20already,%20as%20well%20as%20the%20flax,%20which%20also%20binds%20things%20together.%3C/p%3E%3Cp%3ETeff%20is%20wonderfully%20high%20in%20protein%20and%20fiber%20and%20the%20world%E2%80%99s%20smallest%20grain%20so%20it%E2%80%99s%20extremely%20fine%20and%20works%20well%20in%20this%20kind%20of%20recipe.%20%20If%20you%20can%E2%80%99t%20find%20teff%20flour,%20I%E2%80%99d%20suggest%20amaranth%20or%20quinoa%20%E2%80%93%20because%20of%20the%20moist%20pumpkin%20and%20spices,%20the%20flavors%20get%20absorbed%20well%20and%20give%20you%20all%20the%20punch-packing%20nutrients.%3C/p%3E%3Cp%3EI%20tossed%20some%20in%20cinnamon%20and%20sugar,%20made%20quick%20glaze%20for%20others%20with%20almond%20milk,%20powdered%20sugar%20and%20nutmeg,%20brushed%20some%20with%20melted%20coconut%20oil%20and%20then%20dunked%20them%20
