Tis the season for baking! How is it that the holiday season makes more keen to tie on an apron? Is it the fact that a hot oven filling the house with sweet fragrances and promises of a full tummy make the cold winter days cheerier? Whatever the reason, these pumpkin spice oatmeal cookie sandwiches are incredible, and I’ll be baking them year-round, they’re so yummy!Pumpkin spiced baked goods are trendy this time of year, and I’m all about jumping on that bandwagon as far as cookies go. These hearty pumpkin oatmeal cookies, adapted from here, are loaded with pumpkin flavor and a blend of cinnamon, nutmeg, cloves and ginger that contrast beautifully with the tangy maple cream cheese filling.

Pumpkin and oatmeal in these sandwich cookies…that must be healthy, right?!

One of my favorite things about the pumpkin spice cookie sandwiches is the pretty piped cream cheese frosting spiked with maple flavor. It’s not only delicious, but looks gorgeous peeking out from between the oatmeal cookies when piped with a pretty decorating tip.

Ingredients

Instructions

Preheat oven to 350F and line cookie sheet with parchment or silicone baking mat.

Whisk together spices, salt, baking powder, flour, and oats.

In the bowl of a stand mixer beat butter with both sugars until creamy, about 5 minutes. Add egg and vanilla. Reduce speed to low and add half the dry ingredients followed by half the pumpkin. Repeat with flour mix and pumpkin.

Using a cookie scoop place cookies 2" apart on sheets. Bake 12 minutes, rotate sheets in oven and bake another 10 minutes. Remove to cooling rack to cool completely before filling.

Filling Beat butter until lightened in color and creamy. Add cream cheese and beat until smooth. Stir in powdered sugar, vanilla, and maple syrup and beat on low until combined. Pipe onto one cookie and top with another. Sprinkle the edges of filling with cinnamon, if desired.2.2
