Receta Pumpkin Spiced Trail Mix
The other day, I received a package in the mail. I do my fair share of on-line shopping, but couldn’t remember what I had ordered.
When I opened the box, I found two containers of Blue Diamond Whole Almonds with a note that said thank you and they were glad they met me. Blue Diamond was one of the incredible sponsors at the Fitbloggin ’13 conference that I attended back in June. So in addition to all the great flavored almonds in our goodie bags, and as a snack during the conference, I got two canister’s delivered to my door.
Of course, I opened up one of the canister’s immediately and started snacking on whole almonds. YUM. But wait, I said to myself. ” Make something with these delicious almonds. ” Yes, they are great naked, but even better all dressed up.
And with Fall right around the corner, I made Pumpkin Spiced Trail Mix.
Pumpkin Spiced Trail Mix

- Serves: 4 cups
- 1 cup whole roasted almonds
- ½ cup pumpkin seeds
- 1 cup Honey Golden cereal (I used Kashi Honey Sunshine cereal)
- ½ cup granola (I used Kashi Go Lean)
- ½ cup dried tart cherries (you can use dried cranberries or currants)
- 2 Tablespoons honey (you can use maple syrup too)
- 3 teaspoons pumpkin pie spice
- 1 teaspoon water
non stick spray
Heat oven to 325°F.
Lightly spray baking pan (like a cookie sheet) with cooking spray.
In small bowl, mix honey, pumpkin pie spice and water.
In large bowl, mix cereal, granola and pumpkin seeds.
Spray lightly (10 seconds) with cooking spray, tossing once or twice.
Drizzle honey mixture over trail mix mixture
Bake for 10 minutes
Remove from heat and stir in dried cranberries.
Let cool completely then store in an air-tight container.

Lots of healthy nuts and seeds make this a fun and easy treat. A fantastic after school snack for your kids. They are also great to pack in your bag for long road trips.
