Receta Pumpkin Syrup for Coffee/Latte
Yes fall is in the air. Well, its in the air in most places, but not really in Florida. A person who is from up north recently asked me how we know when it is Fall in Florida. Mainly because he said there is not a drop in the temperature really, and the leaves aren’t changing colors. Of course, being quick with my come backs, I said we know it is Fall when Starbucks puts out their pumpkin spiced lattes. Of course this got a chuckle from him but I was actually being serious. True we don’t get the beautiful autumn colored leaves down here. Our live oaks don’t even loose their leaves until sometime between December and February. And our temperature does change a little at night in mid October, but no real chill till later in the month or even sometimes November.
I can still remember when the boys were young, they would play outside on Christmas Day with their new toys. You gotta love Florida for that. My mom called from Ohio saying they were having a beautiful white Christmas, but they couldn’t go anywhere because they were snowed in. When she asked to talk to the boys I had to tell her to hold on, they are outside playing. Without thinking she said “in this weather”. I just replied, NO, in our weather. It was in the high 70’s. That’s when she would usually call me a smart ass and say, just put the boys on the phone.
So back to how I know it’s fall in Florida. As all my friends know. I spend a lot of time and money at Starbucks. I love to just sit and watch people and there is always quite an array of people to watch. I also love their pumpkin latte’s. But for those of you and even me when I don’t want to go out, here’s a little recipe for a pumpkin syrup that you can make and keep in the refrigerator. Just a few teaspoons of this in your coffee and a dollop of whipped cream, and you’re good to go. Give it a try. It is very simple. Enjoy!!!!
Ingredients:
- 1 1/2 cups water
- 1 1/2 cups sugar
- 1 vanilla bean (or 1/2 teaspoon vanilla)
- 2 1/2 teaspoons pumpkin pie spice
- 3 tablespoons canned pumpkin puree
Directions:
Combine the water, sugar and vanilla bean in a medium pot over medium heat. Cook until sugar has completely dissolved.
Whisk in remaining ingredients. Cook for about 6 minutes, stirring frequently.
Do not allow mixture to come to a boil. Strain syrup through cheesecloth into a large glass measuring cup.
Transfer to bottle of your choice and store in the refrigerator.
