Ingredientes

  • 1 Tbsp. Canola Oil
  • 1 med Onion minced
  • 6 c. Nonfat Chicken Broth Or possibly Water - Or possibly Mix Of Both
  • 1 1/4 lb Sweet potatoes
  •     Peeled And Roughly Diced
  • 1/2 tsp Nutmeg
  • 1 tsp Salt or possibly to taste
  • 1/4 tsp White pepper
  • 1/2 c. Chunky cranberry sauce
  •     Lowfat Lowfat sour cream

Direcciones

  1. Heat oil in a pot over medium heat; add in onions. Cook, stirring, for 5 min.
  2. Add in stock, potatoes, nutmeg, salt and pepper. Raise heat to high, cover and bring to a boil. Reduce heat to low and simmer, uncovered, for 30 min.
  3. Remove from heat and puree the soup in batches. Replace pureed soup in a pot and reheat, covered, over low heat.
  4. To serve, place a dollop of cranberry sauce and lowfat sour cream in the bottom of each soup bowl. Transfer piping warm soup to a tureen or possibly pitcher and ladle into bowls at the table.
