Purple Potato Pancakes for Fat Tuesday

Today is Mardi Gras and Mardi Gras is French for Fat Tuesday. It refers to the practice of the last day of eating rich fatty foods before we begin the ritual of almsgiving, fasting and praying of the Lenten season. Lent begins on Ash Wednesday which just so happens to be tomorrow.

Today is sometimes refered to Shrove Tuesday. Shrove or Shrive means to confess. We also call today Pancake day. We traditionally make pancakes to use up all the ingredients such as eggs, fat and butter that were not allowed during lent. The tradition continues today.

I decided not to go the traditional route and instead of regular pancakes, I made potato pancakes. To make them kind of gourmet I decided to use the purple potato. These are good, addictive and different from the other potato pancakes you may be used to. I hope you enjoy them as much as my family does!

Also, I used the leftover Purple Mashed Potatoes recipe I made the other day.

Purple Potato Pancakes

Directions:

In a medium bowl combine potatoes, eggs , flour, salt and pepper. Form into uniform patties. Heat a 9 inch frying pan over medium heat. Add oil and swirl around the pan to evenly coat it. Add patties to pan. Cook on each side 3-4 minutes or until golden brown and delicious.

If you like, serve with chopped green onions and honey mustard sauce for the colors of Mardi Gras.
