It is football season and who doesn’t love football?
Alright, not everyone loves football. I know a lot of people who do not care about the Superbowl, but love the commercials.
Or perhaps the team that they like didn’t make it to the Superbowl. Either way this dip is a quick and easy way to enjoy some snacks while watching the game on TV.
Well, there is always college football, and I love to go to college games in my hometown. I have some friends who are die hard tailgaters. They have a grill hooked up to the back of their truck. They spend hours before the game grilling and enjoying a lot of food. I show up an hour before the game with this dip and they love it.
I know it sounds weird, but I find it much more enjoyable to watch a real game than seeing it on the screen. Yelling and screaming to make a touchdown is so much more enjoyable with a lot of people doing it together.
Besides, where else can I enjoy a funnel cake?
Queso Dip
Ingredients:
- 3 tablespoons unsalted butter
- 1/2 cup diced onion
- 1 jalapeno pepper seeds and stem removed
- 2 cloves of garlic minced
- 2 tablespoons all purpose flour
- 1 cup milk
- 1/2 cup chopped cilantro
- 1 can rotel tomatoes with green chili.
- 12 ounces grated smoked gouda
Directions:
Melt the butter in a medium saucepan over medium heat. Add the onions and cook for about 5 minutes. Whisk the flour into the pan and cook for another 30 seconds or so. Slowly pour the milk and stir with a whisk until the sauce thickens. Stir in the cilantro and rotel.
Reduce the heat to low and add the cheese. stirring until is is completely melted.
Serve immediately with tortilla chips, crackers or cut up veggies.
