Quick and Delicious Banana Bread

Inspired by: The New McCall’s Cookbook.

This is a very old cookbook that belonged to my mother. It seems everything I make from this book turns out wonderful.

Ingredientes

  • 1 ¾ cups all-purpose flour – sifted
  • 2/3 cup sugar
  • 3 tsps. baking powder
  • ½ tsp salt
  • ¼ tsp baking soda
  • 1/3 cup butter
  • 1 cup mashed very ripe banana – (2 or 3)
  • 2 eggs

Direcciones

  1. Preheat Oven 350 degrees:
  2. Butter a loaf pan.
  3. In a large bowl, sift flour with sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs.
  4. Add banana and eggs; with electric mixer at low speed, beat 2 minutes.
  5. Turn into prepared pan.
  6. Bake 1 hour and 10 minutes, or until cake tester inserted in middle comes out clean.
