With my boys in scouts, soccer and football, our weeknights are hectic to say the least. I am always on the lookout for main dish recipes that are quick to throw together. I tried this Lemon Chicken Pasta a couple of weeks ago, and it was a hit with everyone. I love that it has veggies in it. Not only do they add some color, it’s great to sneak in extra nutrition without any extra work. You could use different vegetables, but we loved the peas and carrots.This pasta is not loaded with butter and cream, so it’s much lighter than most recipes. It doesn’t have a lot of sauce with it, which is why my kids liked it. They don’t like a lot of sauce with their pasta. If your family prefers things a little saucier, you could definitely double the sauce. I served this with a green salad, and it was a perfect meal. I’m sure leftovers would have been fabulous, but with teenage boys, leftovers rarely happen at our house!

Cook pasta in salted boiling water according to directions on package. Meanwhile, sprinkle the chicken with lemon pepper seasoning and brown in a medium hot skillet with the oil. Add the garlic and cook till chicken juices run clear. Remove chicken from pan and keep warm. Add broth, carrots, peas, cream cheese, and lemon juice to the skillet. Cook and stir till cream cheese is melted. Combine drained pasta, chicken, and sauce in the pan you cooked the pasta in. Add salt and pepper to taste. Cook and stir till heated through. Garnish with grated parmesan cheese if desired.
