Receta Quick and easy Noodles with Pork…..
This is one of those quick and easy dishes, perfect for the middle of the week when the time just seems to be rushing by. You can use any vegetables you have that are suitable for a stir fry! You can also subsitute the pork for chicken or beef.
- 500g cubed pork, marinated in soya sauce
- 1 large packet egg noodles (or others of your choice)
- Soya sauce and 1 Tsp oil for the noodles
- 4 Tbs sunflower oil
- 1 Tsp chopped garlic
- 1 Tsp finely grated ginger
- 1 leek, thinly sliced
- 1 red pepper, thinly sliced
- 1 yellow pepper
- 1 carrot, thinly sliced
- 1 handful of beans, sliced
- 1 courgette, sliced with a peeler
- For the sauce:
- 4 Tbs soya sauce
- 3 Tbs orange juice
- 1 Tbs rice wine vinegar
- 1 tsp sugar
Prepare the noodles according to the package instructions, rinse with cold water, drain and mix with the soya sauce and noodles. Set aside.
Mix all the sauce ingredients together and set aside as well.
Heat 2 Tbs of the oil in a wok, add the pork and fry for a few minutes until just done. Remove and set aside (with the juices).
Heat the remaining 2 Tbs of oil in a wok, add the ginger and garlic and fry for a few seconds. Add the carrots, peppers, leeks, beans and fry for about 5 minutes. Add the courgettes and fry for another 5 minutes. Add the pork, noodles and the sauce, simmer for a few seconds and then mix everything up thoroughly.
Serve immediately.
This will serve 4 adults.
