Receta Quick Garlic Pickles
I love pickles, like REALLY love pickles! I’m a bit picky about my pickles though, they need to be crisp and great simple flavor. My favorite is a good garlic pickle… yes this Italian girl also can’t get enough garlic! The other night I remembered that I had an English cucumber that I hadn’t yet used and decided to give homemade Quick Garlic Pickles a whirl. Lets just say, I ate almost all of them myself… they are easy and delicious!
These are so incredibly easy, you just might never buy store bought pickles again! A mixture of water, garlic, salt, sugar, vinegar and peppercorns are simmered for 5 minutes. The garlicky goodness is cooled completely then poured overtop sliced pickle rounds and refrigerated for an hour or 2 {or overnight}. They are crisp, slightly salty, perfectly garlicky and just a hint of pepper. Perfect on their own or to top a big fat juicy burger! Oh yea, my mouth is watering!
Quick Garlic Pickles
Ingredients
- 1 english cucumber, sliced into rounds
- 1 cup water
- 2-3 garlic cloves rough chop
- 2 tsp salt
- 1 Tbsp sugar
- ¼ cup white vinegar
a pinch of peppercorns
Instructions
Add the water, garlic, salt, sugar and vinegar to a pot, cover and simmer for 10 minutes.
Cool the liquid completely then pour over the sliced cucumber in a shallow dish. Cover and refrigerate for a couple hours or overnight.
