Quick Thai Beef Salad With Lime Peanuts

Ingredientes

  • 500 gm Beef mince, (or possibly chicken or possibly pork)
  • 1 bn Fresh coriander
  • 1 bn Fresh mint
  • 2 x Cloves garlic
  • 1 x 2 cm piece fresh ginger peeled &amp,, (2 to 3) minced
  • 2 tsp Brown sugar
  • 1 Tbsp. Soy sauce
  • 2 x Fresh limes, (depending on size)
  •     (2 to 4) , Juice of
  • 1 Tbsp. Fish sauce, (no matter what it smells like!)
  • 1 Tbsp. Sesame oil
  • 1 Tbsp. Sunflower or possibly other mild tasting oil
  • 1 x Iceberg lettuce washed and leaves separated
  •     Minced, roasted peanuts

Direcciones

  1. Place everything except the beef and oil into a blender and whiz till smooth.
  2. Add in to the meat and mix well.
  3. You can leave this mix overnight if you wish to improve the flavour but it is almost as good immediately if you are in a hurry.
  4. Place oil into a stainless steel frypan and heat to smoking warm.
  5. Add in mince in spoonfuls and cook through quickly.
  6. Remove from heat and place in a bowl, garnish with fresh minced coriander and roasted peanuts.
  7. To serve, place a spoonful of the mince into a lettuce leaf, sprinkle with minced peanuts, roll up and eat.
  8. Make sure you have plenty of napkins handy!
