Quinoa Greek Salad

Quinoa is an Aztec Grain high in protein & fibre.

Ingredientes

  • 2 C chicken or vegetable stock
  • 1 C quinoa
  • 1/2 C diced red pepper
  • 1/2 C diced green pepper
  • 1/2 C diced English cucumber
  • 1/4 C chopped green onion
  • 1/4 C pitted Greek olives
  • 1/4 C diced red onion
  • 2/3 C crumbled feta cheese
  • 1 1/2 tsp grated lemon zest
  • 1/4 C lemon juice
  • 2 T olive oil
  • 1-2 cloves garlic finely minced
  • 1/3 C fresh basil or parsley
  • 1 tsp dried oregano
  • 1 tsp dried basil or 1-2 T fresh basil chopped
  • pinch of pepper

Direcciones

  1. Rinse quinoa in a colander for a few minutes.
  2. Bring stock to a boil in a saucepan.
  3. Stir in the quinoa.
  4. Reduce heat, cover and simmer for 15 minutes until tender and the liquid has been absorbed.
  5. Transfer to a large serving bowl and set aside to cool.
  6. Add the vegetables, olives and feta to the cooled mixture.
  7. Whisk the lemon juice and zest, oil, garlic, dried basil, oregano and pepper in a small bowl.
  8. Pour dressing over the quinoa mixture and toss.
  9. Garnish with fresh basil or parsley.
