Receta Quinoa Greek Salad
Quinoa is an Aztec Grain high in protein & fibre.

- Rinse quinoa in a colander for a few minutes.
- Bring stock to a boil in a saucepan.
- Stir in the quinoa.
- Reduce heat, cover and simmer for 15 minutes until tender and the liquid has been absorbed.
- Transfer to a large serving bowl and set aside to cool.
- Add the vegetables, olives and feta to the cooled mixture.
- Whisk the lemon juice and zest, oil, garlic, dried basil, oregano and pepper in a small bowl.
- Pour dressing over the quinoa mixture and toss.
- Garnish with fresh basil or parsley.
