I used to make this salad with pasta but decided to substitute quinoa and it was great. Cutting the veggies very tiny allows the taste of all of them in each bite.

1 cup uncooked quinoa (rinse well then cook according to package instructions.. ie.. 1 cup of quinoa cooked in 2 cups water or broth)
1 cucumber (chopped small)
2 tomatoes (chopped small)
1 large sweet onion (chopped small)
1 can seasoned black beans (drained but not rinsed)
