Ragi Cookies – A Delicate, Crisp and healthy Treats

Baking is a great way to enjoy certain food ingredients which otherwise never make to our dinning table too often. Most of the days the meal is either veggies with lentils & chapattis or rice recipes with accompaniments. Some of these wonder foods hardly get included into my menu, unless I shun my laziness and make or bake something out of them Ragi or finger millet is one such food ingredients, I love to bring it to my table often. And this time this humble grain Ragi got transformed into these crisp and scrumptious cookies with an extra dose of chocolate chips. These cookies added as a quick dessert last night with a generous spoon of Nutella spread over them.
Ragi is certainly a food ingredient which require an acquired taste, as it is not very appeasing to the palate. The somewhat saw dust taste put off many to even try this most nutritious wholegrain in their cooking. But believe me cookies, puttu, cakes and muffins with a pinch of spice and extra flavors will go a long way in making Ragi an appetizing grain.
Ragi flour, curd ad cinnamon
Ingredients;
(makes a dozen)
- 1 cup Ragi of finger millet flour
- 1 tbsp. cornflour powder
- 1 tbsp. All purpose flour
- 1 tbsp. cocoa powder
- 1/2 cup sugar/palm sugar
- 1/2 cup butter
- 1 tsp. of curd/yogurt
- Chocolate chips
- 1 tsp. cinnamon powder
- 1 tsp. baking powder
Sitting pretty..
Method: Heat a wok and dry fry the Ragi flour for a few minutes till the raw smell disappear. Take a large vessel and add Ragi flour, cornflour, all purpose flour, baking powder and cinnamon powder into it. Mix all the dry ingredients thoroughly.
Take another vessel and add melted butter, sugar and the curd into it. Mix the wet ingredients till the sugar melts.
Add the wet ingredients to the dry flour mix slowly and mix the whole with hands. Make a hard dough. Grease a baking cookies sheet or line the baking tray with parchment paper.
Heat oven to 190°C for 10 minutes.
Make small balls from the dough and arrange them on the cookie sheet. Do not press the balls too much, add the chocolate chips on each cookie.
Fresh Bake!
Bake the cookies at 190 °C for 12-15 minutes or till done.

Notes;
Palm sugar gives a very sweet flavor to these Ragi cookies.
Try cardamom flavored Ragi cookies instead of cinnamon for a much Indian flavour.
Skip the sugar if you can and enjoy the natural sweetness of the grain.
These cookies are very brittle and will break easily, handle them carefully when you are demoulding them or packing them into a box.
