Receta Raisin-Pecan and Cheese Tea Sandwiches...
When the girl and boy were little I used to take them across the pond to Poulsbo...a quaint little town that's often referred to as "Little Norway" because of the snow-peaked Olympic Mountains that surround it, similar to the fjords of Norway. Downtown Poulsbo is situated on Liberty Bay and when the tide was out, Poulsbo offered great fun for the kids - tide pools with crabs, starfish and shells - they could spend hours searching for things. Poulsbo also has an aquarium with hands-on, large tables of water filled with sea cucumbers and urchins the kids can feel, feed and touch - aside from that it's pretty lame but the girl and boy never tired of going there. They also loved the soda fountain and the bakeries...but I loved the Tea Room. I would drag the kids in there with promises of candy if they would just sit and behave long enough for me to have one of their Raisin-Pecan and Cheese sandwiches...which made the hour and 15 minute trek to Poulsbo worth it! Alas, the Tea Room is no longer there so now I just go to Poulsbo to visit Heirloom Quilts - it's a lovely shop with great fabrics, and one of Washington State's largest quilt shops but no Raisin-Pecan and Cheese Tea Sandwiches!
This may not be what you think of when you think of a Tea Sandwich or even a lunch sandwich...but I'm telling you, it's dang good! I served these at my High Tea/Quilt Group Meeting last week and the ladies loved them! Cheddar cheese, raisins, chopped pecans and green onion held together with mayo...seriously good...and if I couldn't make them at home I'd still shell out the $$$ for gas and pay $35 for the ferry ride and high-tail it over to Poulsbo to get them if they were still available!
- Raisin-Pecan and Cheese Tea Sandwiches - Pots and Pins
- 1/2 cup raisins
- 1/2 cup pecan pieces
- 1 cup grated cheddar cheese, firmly packed
- 1 green onion, finely chopped
- 1/3 cup mayonnaise
8 slices bread, crusts removed (I used Sandwich Thins to make my Tea Sandwiches)
Combine all ingredients in a large bowl. Spread over bread/sandwich thins/rolls of your choice. Makes 4 individual sandwiches or, if you cut each sandwich into quarters, 16 Tea Sandwiches. Keep refrigerated until serving time and refrigerate any leftovers. (I fear the picture just won't do these fabuous little sandwiches justice...so make them and see for yourself!)
