Ingredientes

  • 4 x garlic cloves chopped
  • 2 Tbsp. extra-virgin extra virgin olive oil
  • 2 bn rapini - (abt 2 lbs) bottom 3" or possibly 4" of
  •     stems trimmed away
  • 1 c. low-sodium no-fat chicken broth

Direcciones

  1. Heat garlic in oil over medium heat in a large skillet till garlic sizzles in oil. Add in the rapini, as much as you can fit in pan at a time. Turn and coat with oil as you wilt the greens.
  2. Add in broth. Bring to a boil. Cover and reduce heat to low. Simmer 10 to 12 min to soften the bitterness of the greens.
  3. This recipe yields 6 servings.
