%20eating%20tour%20of%20the%20Midwest:%20this%20afternoon%20Paula%20and%20I%20will%20fly%20back%20to%20California%20after%20spending%20two%20weeks%20doing%20all%20of%20the%20eating%20we%20possibly%20could%20in%20Madison%20and%20Chicago.%3C/p%3E%3Cp%3EMy%20personal%20highlights%20include%20all%20the%20food%20at%20my%20family%E2%80%99s%20summer%20solstice%20party,%20not%20to%20mention%20going%20out%20for%20Nepali,%20Middle%20Eastern,%20East%20African,%20and%20Korean%20food%20in%20Madison;%20deep%20dish%20pizza,%20Costa%20Rican,%20and%20Ethiopian%20food%20in%20Chicago;%20and,%20you%20know,%20lots%20of%20beer,%20cheese%20curds,%20and%20ice%20cream.%3C/p%3E%3Cp%3EFor%20those%20who%20know%20Madison,%20never%20fear:%20I%20made%20sure%20to%20take%20Paula%20to%20the%20Union%20Terrace%20for%20Babcock%20Ice%20Cream%20(orange%20custard%20chocolate%20chip!)%20and%20to%20Michael%E2%80%99s%20Frozen%20Custard%E2%80%94which%20I%E2%80%99m%20willing%20to%20bet%20for%20some%20people%20is%20just%20about%20synonymous%20with%20Madison%20(we%20went%20three%20times!).%3C/p%3E%3Cp%3EI%20also%20somehow%20found%20time%20to%20bake%20this%20raspberry%20tart%20for%20my%20mom%20and%20step-dad.%3C/p%3E%3Cp%3EMy%20mom%20can%E2%80%99t%20enjoy%20many%20rich%20(i.e.,%20restaurant)%20foods%20right%20now%20because%20of%20all%20the%20remission%20maintenance%20drug%20(aka%20chemo)%20side%20effects,%20but%20I%20wanted%20her%20to%20be%20able%20to%20partake%20in%20just%20a%20little%20of%20the%20decadence%20herself.%3C/p%3E%3Cp%3EI%E2%80%99d%20packed%20my%209%C2%BD-inch%20tart%20pan%20in%20my%20carry-on%20hiking%20backpack%20(which%20has%20accompanied%20me%20to%20five%20continents,%20but%20has%20never%20been%20used%20for%20actual%20hiking),%20expecting%20to%20make%20a%20version%20of%20this%20tart%20for%20the%20solstice%20party,%20but%20the%20weather%20was%20too%20hot%20and%20the%20oven%20too%20in%20demand,%20so%20my%20baking%20project%20got%20relegated%20to%20the%20second%20week%20of%20my%20visit.%3C/p%3E%3Cp%3EI%20think%20that%20was%20for%20the%20best,%20though,%20since%20that%20way%20my%20mom%20(and%20I)%20got%20to%20enjoy%20more%20of%20the%20tart.%3C/p%3E%3Cp%3EThe%20recipe%20is%20adapted%20from%20Alice%20Medrich%E2%80%99s%20Pure%20Dessert%20(as%20are%20my%20blood%20orange%20tart%20and%20zesty%20lemon%20lime%20bars;%20I%20love%20that%20cookbook!).%20I%E2%80%99ve%20made%20her%20%E2%80%9CReally%20Raspberry%20Coconut%20Tart%E2%80%9D%20several%20times%20now%E2%80%94mostly%20without%20modifying%20it%20at%20all%E2%80%94but%20at%20Paula%E2%80%99s%20request,%20I%20adapted%20it%20to%20include%20a%20hidden%20layer%20of%20chocolate.%3C/p%3E%3Cp%3E(Because%20why%20not%20pile%20on%20the%20decadence%20while%20you%E2%80%99re%20at%20it?%20That%20must%20have%20been%20my%20guiding%20philosophy,%20anyway,%20when%20I%20decided%20to%20melt%20a%20handful%20of%20semi-sweet%20chocolate%20chips%20together%20with%20several%20pats%20of%20butter%20and%20a%20spoonful%20of%20triple%20sec.%20Although,%20in%20my%20defense,%20I%20decreased%20the%20sugar%20in%20the%20coconut%20crust.)%3C/p%3E%3Cp%3EA%20lovely%20gooey%20chocolate%20layer%20emerged%20to%20balance%20out%20the%20tartness%20of%20the%20fresh%20raspberries.%20Yet%20another%20recipe%20success%20story%20that%20I%20owe%20to%20Paula!%3C/p%3E%3Cp%3EI%20had%20no%20bittersweet%20chocolate%20in%20the%20house%20at%20the%20time,%20but%20I%E2%80%99m%20sure%20you%20could%20substitute%20bittersweet%20or%20dark%20chocolate,%20with%20a%20tweak%20here%20or%20there,%20to%20an%20equally%20nice%20effect.%3C/p%3E%3Cp%3EAlice%20Medrich%20suggests%20dusting%20the%20tart%20with%20powdered%20sugar,%20or%20serving%20it%20with%20vanilla%20ice%20cream%20on%20the%20side%E2%80%A6%20I%20skipped%20the%20chocolate%20layer%20for%20my%20parents,%20but%20we%20made%20up%20for%20that%20by%20pairing%20it%20with%20nothing%20less%20than%20vanilla%20custard%20from%20Michael%E2%80%99s%20Frozen%20Custard;%20it%20made%20for%20a%20lovely%20celebration%20of%20summer.%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3ERaspberry%20Chocolate%20Tart%20with%20Coconut%20Crust%3C/p%3E%3Cp%3E(Adapted%20from%20Really%20Raspberry%20Coconut%20Tart%20in%20Pure%20Dessert%20by%20Alice%20Medrich)%3C/p%3E%3Cp%3E(Serves%208-10)%3C/p%3E%3Cp%3EIngredients%20for%20the%20Crust:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Place%20a%20heavy%20baking%20sheet%20in%20the%20lower%20third%20of%20the%20oven%20and%20pre-heat%20to%20425%20degrees.%20Place%20a%20medium%20bowl%20near%20the%20stove,%20and%20toast%20the%20coconut%20in%20a%20large,%20heavy%20skillet%20(over%20medium%20heat%20until%20it%20starts%20to%20change%20color,%20then%20over%20much%20lower%20heat)%20for%204-6%20minutes,%20stirring%20it%20the%20entire%20time%20so%20that%20it%20doesn%E2%80%99t%20burn.%20Transfer%20toasted%20coconut%20to%20the%20medium%20bowl.%3C/p%3E%3Cp%3E2.%20Add%20the%20sugar,%20melted%20butter,%20vanilla,%20and%20salt%20to%20the%20coconut%20and%20mix%20well.%20Add%20the%20flour%20and%20mix%20until%20just%20combined.%20Turn%20out%20dough%20into%20tart%20pan%20and%20press%20it%20evenly%20around%20the%20sides,%20into%20the%20corners,%20and%20across%20the%20bottom.%20Place%20tart%20pan%20on%20a%20square%20of%20tin%20foil%20and%20fold%20the%20foil%20loosely%20around%20the%20edge%20of%20the%20crust%20to%20protect%20it%20from%20browning%20too%20much%20during%20the%20first%20part%20of%20baking.%20Place%20the%20foil-protected%20tart%20pan%20with%20crust%20onto%20the%20baking%20sheet%20in%20the%20oven%20for%205%20minutes.%3C/p%3E%3Cp%3E3.%20Meanwhile,%20in%20a%20medium%20bowl%20(the%20same%20one%20if%20you%20like,%20or%20a%20clean%20one),%20combine%20the%20frozen%20raspberries,%20with%20the%202%20Tbsp.%20sugar%20and%201%20Tbsp.%20flour,%20and%20gently%20mix,%20then%20set%20aside.%3C/p%3E%3Cp%3E4.%20Make%20the%20chocolate%20filling:%20in%20a%20small,%20heavy%20saucepan,%20melt%20the%20chocolate,%20butter,%20and%20triple%20sec%20over%20medium-low%20heat,%20stirring%20continuously.%20(This%20should%20only%20take%203-4%20minutes.)%20Remove%20the%20tart%20crust%20from%20the%20oven%E2%80%93%20by%20taking%20out%20the%20entire%20baking%20sheet%E2%80%93%20and%20prick%20down%20any%20raised%20parts%20of%20the%20crust%20with%20a%20fork.%20Then%20evenly%20spread%20out%20the%20chocolate%20filling%20across%20the%20bottom%20of%20the%20crust.%20Next,%20gently%20layer%20the%20frozen%20raspberries%20onto%20the%20chocolate,%20spreading%20them%20evenly%20without%20moving%20the%20chocolate%20around%20too%20much.%20Return%20to%20the%20oven%E2%80%93%20with%20the%20tin%20foil%20still%20protecting%20the%20crust%20edges%E2%80%93%20for%20another%2010%20minutes.%3C/p%3E%3Cp%3E5.%20Lower%20the%20oven%20temperature%20to%20350%20degrees,%20and%20use%20tongs%20to%20completely%20unfold%20the%20tin%20foil%20(you%20can%20also%20use%20them%20to%20spread%20out%20the%20raspberries%20a%20little%20more%20evenly%20if%20necessary).%20Bake%20for%20another%2025-30%20minutes.%20Remove%20tart%20and%20place%20fresh%20raspberries%20upside-down%20and%20close%20together,%20pressing%20them%20gently%20into%20the%20hot%20berries.%20Let%20cool%20completely%20on%20a%20rack.%20Dust%20with%20powdered%20sugar%20to%20serve.%20Enjoy%20on%20the%20first%20day%20or%20store,%20covered,%20in%20the%20fridge.%3C/p%3E%3Cp%3ERelated%20recipe%20posts:%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
