,%20make%20my%20own%20prom%20dresses,%20or%20raise%20the%20perfect%20pig...I%20learned%20responsibility,%20leadership%20skills,%20and%20built%20some%20amazing%20life-long%20friendships.%204-H%20brought%20my%20family%20closer%20as%20we%20worked%20on%20projects%20together,%20celebrating%20our%20victories%20and%20learning%20from%20our%20mistakes.%20On%20top%20of%20it%20all,%20we%20had%20a%20lot%20of%20fun.%20Today,%204-H%20has%20grown%20into%20a%20community%20of%206%20million%20young%20people%20across%20America%20learning%20leadership,%20citizenship,%20and%20life%20skills.%3C/p%3E%3Cp%3EThe%204-H%20Mission%3C/p%3E%3Cp%3E4-H%20empowers%20youth%20to%20reach%20their%20full%20potential,%20working%20and%20learning%20in%20partnership%20with%20caring%20adults.%3C/p%3E%3Cp%3EThe%204-H%20Vision%3C/p%3E%3Cp%3EA%20world%20in%20which%20youth%20and%20adults%20learn,%20grow%20and%20work%20together%20as%20catalysts%20for%20positive%20change.%3C/p%3E%3Cp%3EIf%20you%20have%20a%20child%20or%20know%20a%20child%20that%20is%20looking%20for%20an%20opportunity%20for%20learning,%20fun,%20leadership,%20and%20friendship,%20then%20please%20consider%204-H%20as%20an%20option.%204-H%20is%20for%20every%20child%20and%20is%20offered%20in%20every%20county%20in%20every%20state,%20as%20well%20as%20the%20District%20of%20Columbia,%20Puerto%20Rico%20and%20over%2080%20countries%20around%20the%20world.%20I%20used%20to%20love%20going%20on%204-H%20trips%20in%20my%20teenage%20years%20and%20meeting%20other%204-Her's%20from%20around%20the%20country.%20We%20came%20from%20all%20over%20and%20our%20circumstances%20were%20different,%20but%20we%20shared%20a%20common%20bond.%204-H%20also%20deepened%20my%20interest%20in%20local%20and%20national%20politics,%20giving%20me%20the%20opportunity%20to%20sit%20down,%20face-to-face%20with%20my%20representatives,%20congressmen%20and%20women,%20and%20discuss%20the%20issues%20as%20they%20affected%20our%20lives.%20You%20don't%20have%20to%20live%20on%20a%20farm%20and%20it's%20not%20expensive.%20Heck,%20you%20can%20even%20make%20money%20at%20it%20AND%20obtain%20scholarships.%20There%20are%20excellent%204-H%20opportunities%20for%20children%20in%20urban%20communities.%3C/p%3E%3Cp%3EClearly,%20I'm%20an%20advocate,%20but%20I%20have%20to%20say%20that%20being%20a%20part%20of%20the%204-H%20community%20is%20extremely%20rewarding.%20If%20you're%20interested,%20then%20check%20out%20the%204-H%20website,%20where%20you%20can%20learn%20more%20about%204-H%20in%20your%20area.%20It's%20definitely%20worth%20a%20look!%3C/p%3E%3Cp%3EOkay,%20now%20back%20to%20the%20coffee%20cake.%3C/p%3E%3Cp%3EI%20began%20by%20greasing%20and%20flouring%20my%20springform%20pan%20and%20preheating%20the%20oven.%3C/p%3E%3Cp%3EThen%20I%20mixed%20together%20the%20flour%20and%20sugar%20and%20using%20my%20pastry%20blender%20(although%20a%20fork%20works%20fine%20too).%20I%20cut%20in%20the%20butter...%3C/p%3E%3Cp%3EUntil%20the%20mixture%20resembled%20coarse%20crumbs.%20Reserve%20a%20cup%20of%20this%20crumbly%20mixture%20for%20topping%20the%20coffee%20cake.%3C/p%3E%3Cp%3ETo%20the%20remaining%20mixture,%20add%20the%20baking%20soda,%20baking%20powder,%20salt,%20sour%20cream,%20egg,%20and%20almond%20extract.%20Blend%20well,%20until%20all%20of%20the%20ingredients%20are%20combined,%20but%20not%20too%20well....you%20want%20a%20nice%20tender%20cake.%20Over%20mixing%20can%20lend%20itself%20to%20a%20tougher%20finished%20product.%3C/p%3E%3Cp%3ESpread%20the%20batter%20over%20the%20bottom%20and%20up%201%20inch%20of%20the%20sides%20of%20the%20prepared%20pan.%3C/p%3E%3Cp%3EThen%20combine%20the%20cream%20cheese,%20sugar,%20and%20egg.%3C/p%3E%3Cp%3ESpread%20the%20filling%20batter%20evenly%20over%20the%20cake%20batter%20in%20your%20springform%20pan.%3C/p%3E%3Cp%3ENow%20for%20the%20raspberry%20topping.%20It's%20really%20just%20seedless%20raspberry%20preserves.%20I%20find%20that%20the%20easiest,%20less-mess%20way%20to%20distribute%20the%20preserves%20is%20to%20spoon%20them%20into%20a%20plastic%20baggie.%20Then%20you%20can%20sort%20of%20mush%20and%20massage%20the%20preserves%20into%20a%20smoother%20state.%3C/p%3E%3Cp%3EThen%20you%20can%20clip%20a%20corner%20off%20of%20the%20baggy%20and%20squeeze%20the%20preserves%20evenly%20over%20the%20surface%20of%20the%20cake.%3C/p%3E%3Cp%3EOnce%20the%20preserves%20are%20on%20the%20cake,%20I%20take%20a%20knife%20and%20swirl%20them%20in.%3C/p%3E%3Cp%3ENext,%20I%20mixed%20some%20sliced%20almonds%20into%20the%20reserved%20crumbs%20for%20the%20cake%20topping.%3C/p%3E%3Cp%3ESprinkle%20them%20evenly%20over%20the%20cake%20and...BAKE!%20350%20degrees%20for%2045-55%20minutes%20or%20until%20the%20top%20is%20golden%20brown.%3C/p%3E%3Cp%3ECool%20the%20cake%20for%2015%20minutes%20on%20a%20rack,%20then%20remove%20the%20sides%20of%20the%20pan%20and%20either%20cool%20further%20or%20serve%20warm.%20I%20usually%20bake%20this%20the%20night%20before%20and%20serve%20it%20for%20breakfast.%3C/p%3E%3Cp%3EThis%20cake%20rocks!%20I%20hope%20that%20you%20all%20enjoy%20it%20as%20much%20as%20I%20do.%3C/p%3E%3Cp%3EHere's%20the%20recipe:%3C/p%3E%3Cp%3ERaspberry%20Cream%20Cheese%20Coffee%20Cake%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.In%20a%20large%20mixing%20bowl,%20combine%20flour%20and%20sugar.%20Cut%20in%20butter%20until%20mixture%20is%20crumbly.%20Remove%201%20cup%20and%20set%20aside.%20To%20the%20remaining%20crumbs,%20add%20baking%20powder,%20baking%20soda,%20salt,%20sour%20cream,%20egg%20and%20almond%20extract;%20mix%20well.%20Spread%20in%20the%20bottom%20and%201%20in.%20up%20the%20sides%20of%20a%20greased%209-in.%20springform%20pan.%3C/p%3E%3Cp%3E2.For%20the%20filling,%20in%20a%20small%20bowl,%20beat%20cream%20cheese,%20sugar%20and%20egg%20in%20a%20small%20bowl%20until%20blended.%20Pour%20over%20batter;%20spoon%20or%20pipe%20raspberry%20jam%20on%20top.%20Swirl%20with%20a%20knife.%20Sprinkle%20with%20almonds%20and%20reserved%20crumbs.%3C/p%3E%3Cp%3E3.Bake%20at%20350%20degrees%20F%20for%2045-55%20minutes%20or%20until%20golden%20brown.%20Let%20stand%20for%2015%20minutes.%20Carefully%20run%20a%20knife%20around%20the%20edge%20of%20pan%20to%20loosen;%20remove%20sides%20from%20pan.%20Serve%20warm%20or%20cool.%20Refrigerate%20leftovers.%3C/p%3E%3Cp%3EIf%20you're%20not%20a%20breakfast%20lover,%20thanks%20for%20hanging%20in%20there%20with%20me%20through%20the%20breakfast%20posts.%20I%20promise%20that%20the%20dinner%20I%20post%20tomorrow%20night%20is%20out-of-this-world%20good!%3C/p%3E){kind=link}
