Receta Raspberry Custard #SundaySupper

Love is in the air! That’s what this special day is all about. It’s a fun day of love in all aspects. From our family members to our friends, our sweethearts and even our beloved pets. I am grateful to be married to one terrific guy, who knows how to treat me right.
I always tell the hubby this is the one day I don’t want roses. We actually prefer a quiet evening at home just the two of us. Can you think of a better way to add some romance to an otherwise ordinary day? Sometimes I subject him to a chick flick, which he so lovingly obliges. Sometimes we will create a dish together. It’s fun getting crowded in the kitchen.
We start by popping open our favorite Gallo wine to sip on while we are cooking up a storm. The hubby loves to talk and I love to listen. I hear the same stories over and over. I really mean it when I say lots of them. But I do love hearing them again and again.
We love to listen to music playing in the background while we create a mess in the kitchen.

My raspberry custard is a match made in heaven with Gallo’s Sweet Red. The wine is bursting with flavors of red fruit, black cherry and raspberry jam. It has a velvety soft finish and this wine is easy to enjoy chilled. That’s why the Sweet Red is especially delicious with my raspberry custard.
I chose this dessert because it’s so simple to put together. It can be made ahead of time and is not drenched in sugar so you won’t have to worry about being in a sugar coma. You can actually make this same dessert using white flour. It will result in a creamier texture but add additional carbs. The carb thing is my reasoning for the almond meal substitute.
Get you kids to bed early, make this a night to remember. Relax in the comfort of your own home with a fabulous meal and a nice bottle of wine, or two.

½ cup almond meal ¼ teaspoon baking powder ¼ teaspoon salt ⅓ cup Swerve Sweetener 2 eggs ½ cup milk, 2% ½ cup Plain Greek yogurt (such as Fage 2%) 1 teaspoon vanilla bean paste (can use extract too) ¼ teaspoon lemon peel 12-oz fresh raspberries
Preheat oven to 350F. Lightly spray a 9-inch pie plate with non stick spray In a medium bowl, whisk together almond meal, baking powder, salt and sweetener. In a large bowl, whisk together eggs, milk, yogurt, vanilla and lemon peel until very smooth. Add in meal mixture and whisk to combine. Add raspberries into filling mixture and gently stir to coat. Pour into prepared pie plate, shifting raspberries around with a spoon or spatula to evenly distribute them in the pie. I sprinkled the top of my raspberry mixture with a bit of Organic Coconut Pal sugar for crunch. Bake for 30-40 minutes, until custard is set and a knife inserted into the center of the pie comes out clean. Allow to cool before slicing and serving. 3.2.2925
