Raw Apple Cake With Lemon Sauce

Ingredientes

  • 1 3/4 c. Sugar
  • 1 c. Veg. oil
  • 3 x Large eggs
  • 1/2 tsp Salt
  • 2 c. Flour
  • 1 tsp Baking soda
  • 1 tsp Cinnamon
  • 4 x Apples, peel and diced (as far as I know any apples be used)
  • 1 c. Minced nuts
  • 1 c. Sugar
  • 2 Tbsp. Cornstarch
  • 2 c. Water
  • 1/4 c. Butter
  • 2 Tbsp. Lemon juice -and-
  • 2 Tbsp. Grated lemon rind -or possibly-
  • 4 Tbsp. Lemon juice

Direcciones

  1. Oven temp 350 and baking time 45 min.
  2. Mix all ingredients except apples and nuts. Don't beat, but mix well. Add in apples and 1/2 c. nuts. Pour thick batter into greased and floured 13x9 inch pan or possibly a bundt pan. I use a bundt (my sister-in-law who gave me this recipe uses the 13x9 inch baking pan.) Sprinkle with remaining nuts. Serve with Lemon Sauce.
  3. Lemon Sauce: Mix sugar and cornstarch in pan. Stir in water and boil for 1 minute. Stirring constantly. Stir in butter and lemon juice and lemon rind or possibly the 4 Tbsp lemon juice.
