%20It%20was%20cheap,%20%202)%20it%20was%20nearby%20and%20last%20but%20not%20least%20we%20began%20our%20weekend%20early%20with%20a%20margarita.%3C/p%3E%3Cp%3EBut%20on%20a%20few%20occasions,%20we%20would%20venture%20downtown%20to%20the%20Hardy%20House,%20a%20beautiful%20old%20mansion%20with%20open%20air%20courtyard%20that%20had%20wonderful%20food.%20%20One%20of%20their%20specials%20was%20a%20slice%20of%20quiche%20and%20salad%20and%20because%20it%20was%20Friday,%20a%20strawberry%20daiquiri.%20%20To%20me,%20quiche%20was%20so%20very%20French%20and%20I%20thought%20it%20must%20be%20so%20hard%20to%20make.%20%20Little%20did%20I%20know%20it's%20not%20difficult%20at%20all.%20%20It's%20another%20one%20of%20those%20%22forgiving%20recipes%22,%20hard%20to%20mess%20up.%3C/p%3E%3Cp%3EThis%20recipe%20starts%20with%20a%20deep%20dish%209%20inch%20ready%20made%20pie%20shell.%20%20Years%20ago%20I%20made%202%20shallow%209%20inch%20pies,%20giving%20us%20a%20whole%20quiche%20for%20leftovers%20and%20packed%20%20them%20in%20our%20lunches.%20%20Needless%20to%20say,%20my%20co-workers%20were%20jealous%20when%20my%20quiche%20arrived%20out%20of%20the%20microwave%20while%20they%20were%20eating%20frozen%20burritos%20from%20the%20vending%20machine!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20450%20degrees.%20%20Prick%20the%20pie%20shell%20with%20a%20fork%20and%20bake%20in%20the%20oven%20for%2010%20minutes.%20%20Remove%20and%20set%20aside.%20%20In%20a%20large%20skillet,%20%20add%20the%20butter,%20heat%20on%20medium,%20%20then%20add%20the%20onions,%20red%20pepper,%20panchetta,%20and%20garlic%20and%20saute%20for%205%20minutes.%20%20Add%20the%20mushrooms%20and%20then%20the%20steamed%20(but%20firm)%20broccoli%20to%20the%20mix%20and%20cook%20for%20about%2010%20minutes.%3C/p%3E%3Cp%3EOnions,%20panchetta%20and%20peppers%EF%BB%BF%3C/p%3E%3Cp%3EAdd%20mushrooms%20and%20broccoliMeanwhile%20beat%20the%20eggs%20together%20with%20the%20half%20and%20half.%20%20Put%20the%20broccoli%20mixture%20into%20the%20waiting%20pie%20shell.%20%20Cover%20with%20the%20Swiss%20cheese.%20%20Pour%20the%20egg%20mixture%20over%20this%20being%20careful%20to%20drizzle%20it%20evenly%20and%20around%20the%20edges.%20%20Tamp%20down%20slightly%20with%20a%20wooden%20spoon.%20%20Sprinkle%20with%20a%20dash%20of%20paprika,%20for%20color.%20%20Reduce%20the%20oven%20temperature%20to%20350%20%20and%20bake%20for%20about%2035%20minutes.%20%20If%20the%20edges%20start%20to%20burn%20,%20cover%20them%20with%20foil.%20%20Remove%20from%20the%20oven%20when%20done%20and%20let%20it%20sit%20before%20cutting.%3C/p%3E%3Cp%3EFor%20a%20change,%20use%20different%20veggies%20or%20cheese.%20%20%20It%20sounds%20like%20alot%20of%20steps%20to%20make%20this%20but%20after%20a%20while%20you%20can%20make%20it%20%22in%20your%20sleep%22!%3C/p%3E%3Cp%3EFinished!%3C/p%3E){kind=link}
