%20and%20I%20wanted%20to%20try%20adding%20sour%20cream%20to%20the%20batter%E2%80%A6%3C/p%3E%3Cp%3EThis%20recipe%20for%20Banana%20Sour%20Cream%20Muffins%20is%20good%20on%20its%20own%E2%80%A6%20but%20if%20you%20want%20to%20take%20it%20a%20step%20further%E2%80%A6.%20frost%20it%20with%20Mascarpone%20Frosting.%3C/p%3E%3Cp%3EI%20came%20across%20a%20banana%20muffin%20recipe%20from%20Giada%20DeLaurentiis%20that%20frosted%20banana%20muffins%20with%20Mascarpone%20Frosting%E2%80%A6%20so%20I%20decided%20to%20make%20my%20Banana%20Sour%20Cream%20Muffins%20and%20frost%20them%20with%20her%20frosting%20recipe%E2%80%A6.%20I%20did%20adapt%20her%20recipe%20slightly%E2%80%A6.%20the%20result%20was%20divine%E2%80%A6.%20I%20couldn%E2%80%99t%20have%20asked%20for%20a%20better%20result.%3C/p%3E%3Cp%3ETIPS%3C/p%3E%3Cp%3EI%20used%20paper%20liners%20for%20the%20muffins%E2%80%A6.%20I%20think%20they%E2%80%99re%20easier%20to%20get%20the%20muffins%20out%20of%20the%20pan%20with%20them.%3C/p%3E%3Cp%3EI%20use%20very%20ripe%20bananas%E2%80%A6%20almost%20totally%20black%E2%80%A6%20they%E2%80%99re%20very%20soft%20and%20the%20banana%20flavor%20is%20strong%E2%80%A6%20they%E2%80%99re%20so%20easy%20to%20work%20with%E2%80%A6%20just%20mash%20them%20with%20a%20fork.%3C/p%3E%3Cp%3EI%20melt%20my%20butter%20in%20a%20measuring%20cup%20in%20the%20microwave.%20I%20cut%20the%20butter%20into%20one%20tablespoon%20chunks%E2%80%A6%20it%20will%20melt%20more%20evenly%20if%20you%20do%20this.%3C/p%3E%3Cp%3EThis%20recipe%20made%2014%20muffins.%3C/p%3E%3Cp%3EI%20used%20a%20little%20more%20cream%20cheese%20than%20Giada%E2%80%99s%20recipe%E2%80%A6.%20I%20made%20hers%20but%20decided%20that%20it%20was%20off%20a%20little%E2%80%A6.%20and%20needed%20more%20tang%E2%80%A6.%20the%20honey%20is%20very%20sweet%E2%80%A6.%20so%20I%20used%204%20ounces%20(or%20half%20an%208%20ounce%20package)%20of%20cream%20cheese.%3C/p%3E%3Cp%3EUse%20an%20ice%20cream%20scoop%20to%20fill%20the%20muffin%20tin%E2%80%A6%20it%20fills%20the%20exact%20amount%20you%20need.%3C/p%3E%3Cp%3EMy%20butter%20and%20cream%20cheese%20were%20at%20room%20temperature%E2%80%A6%20it%20made%20for%20a%20very%20soft%20frosting%E2%80%A6%20after%20making%20your%20frosting,%20you%20may%20want%20to%20put%20it%20in%20the%20fridge%20for%20about%2010%20minutes%20to%20set%20it%20up%20a%20bit%20better.%3C/p%3E%3Cp%3EI%20list%20the%20nuts%20as%20optional%E2%80%A6%20they%20certainly%20add%20to%20the%20flavor%20in%20the%20muffin%20and%20the%20look%20of%20the%20frosted%20muffin%E2%80%A6%20but%20you%20can%20leave%20them%20out%20if%20you%20prefer.%3C/p%3E%3Cp%3EThe%20recipe%20calls%20for%203%20tablespoons%20of%20honey%E2%80%A6%20this%20becomes%20a%20very%20sweet%20frosting%E2%80%A6%20if%20you%20prefer%20more%20tang%20in%20your%20cream%20cheese/mascarpone%20frosting%E2%80%A6%20start%20with%20two%20tablespoons%20and%20taste%20it%20before%20adding%20more.%3C/p%3E%3Cp%3EFor%20instructions%20on%20how%20to%20toast%20walnuts%20see%20my%20post.%3C/p%3E%3Cp%3EI%20hope%20you%20try%20this%E2%80%A6%20it%20was%20simply%20delicious!%3C/p%3E%3Cp%3ERecipe:%20Banana%20Sour%20Cream%20Muffins%20with%20Mascarpone%20Frosting%3C/p%3E%3Cp%3EAll%20you%20need:%3C/p%3E%3Cp%3EFor%20the%20Muffins:%3C/p%3E%3Cp%3EAll%20you%20need%20to%20do:%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3ELine%20a%20muffin%20tin%20with%20paper%20liners.%3C/p%3E%3Cp%3EIn%20a%20large%20mixing%20bowl,%20mash%20the%20bananas%20with%20a%20fork%20until%20fairly%20smooth.%3C/p%3E%3Cp%3EAdd%20the%20melted%20butter%20and%20stir%20completely%20with%20a%20fork.%3C/p%3E%3Cp%3EAdd%20the%20sugar,%20egg,%20vanilla,%20cinnamon,%20nutmeg%20and%20salt%E2%80%A6.%20mix%20completely.%3C/p%3E%3Cp%3EAdd%20the%20sour%20cream%E2%80%A6%20mix%20completely.%3C/p%3E%3Cp%3ESprinkle%20the%20baking%20soda%20and%20baking%20powder%20over%20the%20batter%20and%20stir%E2%80%A6.%20Mix%20completely.%3C/p%3E%3Cp%3EAdd%20the%20flour%20and%20mix%20until%20the%20flour%20is%20completely%20mixed%20into%20the%20batter.%3C/p%3E%3Cp%3EOptional%20Step%E2%80%A6.%20Add%20the%20walnuts%20and%20mix%20completely.%3C/p%3E%3Cp%3EScoop%20out%20the%20batter%20into%20the%20paper%20liners%20in%20the%20muffin%20tin,%20filling%202/3%20full.%3C/p%3E%3Cp%3EBake%20for%2025-30%20minutes%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20of%20the%20muffin%20comes%20out%20clean.%3C/p%3E%3Cp%3ECool%20on%20a%20rack%20for%205%20minutes%20then%20turn%20out%20the%20muffins%20out%20of%20the%20muffin%20tin%20and%20cool%20on%20rack.%3C/p%3E%3Cp%3EIf%20frosting%20the%20muffins,cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3ETo%20Make%20the%20Mascarpone%20Frosting:%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20using%20an%20electric%20mixer,%20beat%20the%20cream%20cheese%20and%20butter%20until%20light%20and%20fluffy.%3C/p%3E%3Cp%3EBeat%20in%20the%20mascarpone%20cheese%20and%20then%20beat%20in%20the%20honey.%3C/p%3E%3Cp%3EFrost%20the%20muffins%20and%20sprinkle%20with%20the%20walnuts.%3C/p%3E){kind=link}
