All good things in life are simple and I feel that it is our expectations and desire to get more from it makes it complex. The junk food addiction, chopping down trees endlessly to make paper marooning animals of their habitats, plastic menace….we are moving from simple ways of living to the more complex world. And to think of it, the idea of wrapping around leaves and eating apples straight from the tree as done by our ancestors could solve many a problems of modern day living

A fresh fruit in its natural form is my kind of dessert any day and given a choice I would love to serve a plate of fresh fruits to my guests as well to end a meal. “This is not a dessert we will expect from the author of a food blog” is the answer to my query from my guests most of the time.

“Make something light but classy, less sugar and low fat recipe as R is an ardent foodie but is a health freak too” said hubby as a matter of fact. These Nutty Biscuit Truffles I made for R, a common friend of ours with nuts rolled in desiccated coconut and cocoa powder looked so classy it was hard for all to make out the real ingredient in it.

Making a decadent dessert was never so easy, and with all the ingredients easily available in your pantry this Truffle recipe is a winner. Roll these Truffles and refrigerate, pack them in the snack box of your kids for a scrumptious homemade healthy treat, it stays good for a week.

The digestive biscuits, nuts and the Truffles cups..

Ingredients;

Method; Crush digestive biscuits by hand roughly, these biscuits ( I used McVities) are quite crumbly and can be crushed easily. Chop all the nuts roughly. A mix of Pistachio, almonds and walnuts goes well with the Truffles.

Heat a pan and melt butter and honey in it. Add cocoa powder and take the pan off the flame.

I poked that cocoa Truffle..Grr…

Add crushed digestive biscuits and nuts in the wet ingredients and mix well using a ladle to form a semi solid dough. If you feel hard to bring together all the ingredients add a tsp. or two of milk in the ingredients and make the dough.

Take two shallow plates and sprinkle desicated coconut and cocoa powder in each.

The beauty…

Roll out small balls from the dough and dust it in cocoa powder or desiccated coconut. Arrange all the Truffles in a flat dish or in a paper box and refrigerate till use. These Truffles will not melt or loose its shape unlike the Truffles made with cream and cooking chocolate mixture.

Notes;

Add a few Marie biscuits to give extra crunch to the truffles. As digestive biscuits are brittle and will soften when mixed with liquid ingredients in the recipe.

Try using groundnuts for in place of almonds and pistachio nuts in the recipe.

Add a few drops of milk if you feel it is hard to roll in a ball and a tsp of crushed biscuit if the dough becomes too liquid to roll.
