Head straight on to the recipe for Citrus Salad ♥ Citrus Salad This delightful winter salad contains all the goodness that oranges and grapefruit provide, and is perfect for keeping those winter colds away. The citrus segments add just the right note of sweet and sour, while the avocado adds the creaminess. The oranges actually alkalise our bodies, even though they’re acidic when we eat them. In mythology they were known as the fruits of the gods, and were probably the ‘golden apples’ that Hercules stole. Citrus Salad – Extracted from All Sorts of Salads by Chantal Lascaris (Struik Lifestyle) For those of you who have not been a part of my blogging life since 2009 might not know that Dave and I are building a house. It is probably the longest build project ever, but we are doing it ourselves and a lot of the things in the house are bespoke. When we moved to Gordons Bay in 2001 we could not agree on a house to buy. Dave sold a plot of land he owned on top of the mountain as we did not want to live there and we continued to rent in the old village of our area while we looked for a suitable parcel of land to buy. We found the perfect site in 2002, 500m from the beach but it was not for sale. We contacted our friendly estate agent and he found the owner and facilitated the purchase of the land. Wanting to have as small a mortgage as possible we took a bond out on the land, leaving us a nest egg for plans, permissions and utilities. In 2003 we dug the foundations and had them cast and then in 2004 we built a garage to live in. This is now known as the cottage. We have garage doors and downstairs there is a lounge, dining room, kitchen and bathroom. Upstairs is our bedroom and study. We have lived in this cottage and I have cooked in the tiny kitchen since February 2005 when we moved in. Since then we have been building our dream home. It is unique in design in that it is double volume and open plan. Downstairs are two guest bedrooms and a bathroom as well as a pub, lounge, dining room, kitchen and scullery. Upstairs is our bedroom, bathroom and study. We have sort of moved in to the living area of the house. We have our main dining room table here, with the antique dining room table in our lounge of the cottage. This has been moved so that Dave can park his car inside at night! We watch TV in the main lounge but I still watch TV in the cottage in the afternoons and when I am in the kitchen. We are slowly starting on getting the scullery done and I shall share photographs as we make progress. As we are eating in the house I like to prepare as much as I can in the new kitchen. This is not easy as all I have to work on is my butcher’s block and gas hob. To this end, one pot meals are the norm and simple salads are being served as side dishes. Winter does not mean the end to fresh ingredients and I made this citrus salad to accompany our dinner when the weather was not too cold. I did not expect Dave to like all the fruit in the salad but he loved it so much that I have continued to add orange segments to our salads since then. Recipe For Citrus Salad   Save Print This refreshing winter salad is all about the orange and grapefruit segments All Rights Reserved: Adapted fro, All Sorts Of Salads page 65 Ingredients for the salad 75g cos lettuce torn by hand into bite size pieces 90g sugar snap peas, trimmed and cut in half 1 avocado peeled and chopped 2 mini cucumbers thickly sliced Segments of 2 oranges Segments of 1 grapefruit 20g walnuts, roughly chopped for the dressing 60mls olive oil 5mls wholegrain mustard 10mls lemon juice Salt and freshly ground black pepper to season Method for the salad Place all of the ingredients into a large salad bowl or scatter on a serving plate Keep the avocado pip with the salad until you serve it to keep the avocado from browning for the dressing Place all of the ingredients into a mixing bowl Whisk to combine Pour over the salad just before serving 3.5.3208 Click on the links for conversions and notes.
