- 1 medium Mediterranean cucumber, quartered, seeds removed and sliced
- 1 ear of corn, corn removed
- salt and freshly ground black pepper to season

- 5g fresh mint
- 100g thick yoghurt
- zest and juice of 1 lime
- 30mls olive oil
- 10mls pomegranate molasses
