I am giving you two recipes for microwave curd. One is for lemon curd and the other grapefruit curd. The timing is dependant on the amount of juice you get out of your fruit. Lemon Curd Tarts Head straight on to the Recipe For Microwave Curd ♥ I know that my method for sterilizing jars is not conventional. But it works for me. I have read many methods of doing this. Some are easier and others way more difficult. But, it is important to sterilize jars before you fill them with anything you want to leave in your fridge. This way any bacteria that might be in the jar will be killed off. And what you add to the glass should therefore keep much longer. It does not mean that it will last forever. Products in glass jars can go off because they do not have any preservatives. Whether natural or added. Or because they come into contact with the air. It is easy to cross contaminate by using the same knife or spoon in more than one container. Or even by sticking our fingers into the jar. No matter how often we wash our hands, and how well we scrub them, we are unlikely to get rid of the bacteria living under our nails. This is not something to gross you out. Just something to be aware of. I learnt the habit in Sydney to not use the same knife in different containers. And so when I put a lot of different condiments on the table I provide a spoon or knife for each one. Sydney is also the origination of this recipe. Microwave Lemon Curd   Save Print Easiest curd using just one lemon All Rights Reserved: Adapted from Not Quite Nigella Ingredients 45g fructose Juice of 1 lemon 25g butter, cubed 1 egg yolk, lightly beaten Method Place the fructose and lemon juice into a bowl and whisk to combine Add the butter and microwave in 30 second bursts until the butter has melted whisking each time Whisk in the egg yolk and microwave in 30 second bursts until the curd thickens (mine took 3 minutes) Transfer straight away to a clean bowl and cover with cling film Allow to cool before using My Notes Increase the recipe if you want more curd. Mine made 65g.
