In January The Food In Jars Mastery Challenge was for marmalade. As I only make use of seasonal ingredients I could not take part. As soon as winter arrived I knew I would make ruby grapefruit marmalade. This has the perfect level of tartness one expects from marmalade. When I took the wrapping paper off, I was most confused by this present. The hatbox itself was wrapped in the same colour material that my bridesmaids wore. And inside was the invitation we had sent to the people who gave us this gift. She had also strewn some rose petals in the box. I read the card and we were told to keep our memories safe in the box. I started by putting in the lavender sugar paste flowers that topped our cake. And I added the negatives of our wedding photographs. Yes, we got married before digital cameras ;). A couple of months after we got married Dave’s father passed away. I placed the memorial pamphlet from his funeral into the box. These have sadly been added to over the years. Together with the cards from our wedding, and special birthday, the box is quite full. And with time the outer material cover has become dirty. Not being able to wash it, I decided to replace the box with a new one. It is the sentiment that counts and not the gift itself. In it is everything important other than our passports that I would grab in case of a fire. Knowing that all our memories are stored in one place makes me feel secure that we could salvage something if disaster ever struck. You never know when something can happen that will change everything forever. There is no seguing into my ruby grapefruit marmalade from this. Ruby Grapefruit Marmalade   Save Print This marmalade has the perfect level of tartness and is packed full of rind All Rights Reserved: Adapted from Preserve page 49 Ingredients 4 ruby grapefruits 2 unwaxed lemons 500mls water, plus extra if needed 500g fructose Method Peel the rind off the grapefruit and lemons and place into a blender Chop finely and set aside Quarter the grapefruit and halve the lemons Place into the blender in batches and roughly chop Put the pulp into a large sauce pan and add the water Over a high temperature, bring to the boil Reduce the temperature and simmer for 45 minutes Drain the pulp through a fine sieve, leaving it to drip for 30 minutes * Using the back of a spoon, press the juice out of the pulp Discard the pulp and measure the juice Top up to 500mls if necessary with water ** Return to a clean sauce pan and add the rinds Cover and simmer over a low temperature for 15 minutes Add the fructose and stir until dissolved Increase the temperature and bring to a boil Leave uncovered to boil for at least 10 minutes so that you achieve a set temperature of 105° Celsius Remove from the heat, crefully skim off any scum and leave to stand for 15 minutes Pour into a sterilized glass jar and leave to cool completely before placing the lid on the jar Can be stored unopened for 12 months - refrigerate once opened My Notes * I did this in batches so as to not overfill my strainer ** I used grapefruit juice as I had some to hand 3.5.3226   Inspiration published on Lavender and Lime July 10: 2016 – Fool Me Once 2015 – Out And About 10 July 2015: Big Roast 2014 – Yoghurt And Tahini Dressing 2013 – Spice Route Restaurant 2012 – Busiate 2011 – Something Savoury Challenge Presto Pasta Nights Top of Page No votes yet.
