There is something about being a repeat customer at a car dealer that makes it worthwhile staying with the same manufacturer. My first car was a Golf, and when that was stolen I went straight out and bought a Ford, without looking at any other car. I liked the tail lights! Dave then bought me a Fiat and after that, my first Hyundai. I started with a Getz and got a second one as my next car. I then got the i20 and for those of you who are facebook friends with me, you will know that I had a serious issue with the clutch on my car. To cut a long story short, the dealer principal at the Helderberg outlet traded in my i20 for a really good price, and sold me an i30 for a discounted price. When it came time to get a new car, Wolf was ready with a very sharp pencil. He gave me a trade in above the book value, and sold me the new car at the old price. I was also given extra’s at no charge. So, it made our repeat visit an extremely good one. Since first making sponge fingers for my Charlotte I have had the excuse to repeat the baking. They are so easy to make, and good practice for me for my piping skills. And totally worth eating and enjoying.

Sponge Fingers All Rights Reserved: Adapted From Larousse Gastronomique page 1013

4 eggs, separated 125g caster sugar - I used fructose 7.5mls orange flower water - I used 3 drops orange essential oil 100g flour pinch of salt Icing sugar for dusting

Preheat the oven to 160° Celsius Place the egg yolks and sugar into a mixing bowl Whisk until at the ribbon stage Add the orange flower water and whisk in Add the flour and gently fold in Place the egg whites and salt into a mixing bowl Whisk to stiff peaks Fold into the egg yolk mixture Place the batter into a piping bag, fitted with the largest smooth nozzle you have Pipe onto a lined baking tray, to your desired length Dust with icing sugar Gently tap the tray twice Bake for 10 minutes Allow to cool on the tray before removing Store in an air tight container 3.3.3077
