%20If%20I%20want%20to%20buy%20mutton,%20I%20have%20to%20take%20whatever%20the%20guy%20at%20the%20butcher%20shop%20decides%20to%20give%20me%20and%20it%20is%20minimum%2070%25%20of%20bones%20and%20skin%20and%20kidneys%20and%20liver.%3C/p%3E%3Cp%3EFish%20is%20river%20fish%20and%20we%20are%20sea%20fish%20eaters.%20Vegetables%20are%20completely%20seasonal%20(a%20concept%20I%20confess%20I%20had%20forgotten)%20and%20there%20are%20a%20lot%20of%20them%20that%20I%20have%20never%20seen%20before.%20A%20couple%20of%20trials%20cooking%20them%20and%20the%20tastes%20still%20haven't%20grown%20on%20us.%20Food%20items%20are%20expensive.%20Coconuts%20are%2050Rs%20a%20piece.%20Tomatoes%2045Rs%20a%20kilo.%20Mutton%20(70%25%20bones%20and%20skin%20&%20spare%20parts)%20250Rs/kilo.%20And%20on%20top%20of%20all%20of%20this%20I%20have%20a%20really%20tiny%20kitchen.%20I've%20never%20before%20worked%20in%20such%20a%20tiny%20kitchen.%3C/p%3E%3Cp%3EPlus%20in%20the%20last%204%20months%20since%20we%20moved,%20I've%20made%20trips%20to%20Delhi,%20Shillong,%20Canada%20and%20London%20and%20the%20dh%20has%20been%20travelling%20much%20more%20than%20that.%20So%20I%20haven't%20really%20found%20a%20reason%20or%20the%20inspiration%20to%20cook.%20I'm%20not%20someone%20who%20decides%20a%20menu%20and%20then%20goes%20out%20shopping.%20I%20go%20out%20to%20the%20market,%20see%20what%20looks%20freshest%20and%20what%20inspires%20me%20and%20then%20I%20bring%20it%20home%20and%20dishes%20suggest%20themelves%20in%20my%20head%20as%20I%20start%20prepping%20my%20ingredients.%3C/p%3E%3Cp%3ESo%20its%20been%20a%20challenge%20for%20me%20to%20cook%20anything%20more%20than%20dal-chawal-sabji%20and%20if%20its%20just%20me%20at%20home,%20its%20chawal%20and%20chutney%20pudi%20or%20achaar.%3C/p%3E%3Cp%3EHowever,%20its%20also%20quite%20depressing%20for%20me%20to%20keep%20eating%20unimaginative%20food,%20so%20I%20have%20to%20kick%20myself%20out%20of%20this%20rut%20and%20find%20ways%20to%20work%20with%20the%20limited%20ingredients%20I%20can%20buy%20here%20or%20carry%20from%20Delhi%20in%20a%20suitcase%20when%20I%20visit.%3C/p%3E%3Cp%3EToday%20the%20husband%20asked%20for%20something%20baked%20with%20eggs%20and%20cheese,%20so%20I%20immediately%20remembered%20a%20recipe%20for%20Bacon%20Hash%20and%20Broiled%20Eggs%20that%20I%20read%20just%20yesterday%20in%20my%20quest%20for%20online%20inspiration%20and%20thought%20I%20could%20tweak%20it%20to%20accomodate%20the%20ingredients%20that%20I%20had%20in%20my%20cupboards.%20Hopefully%20I%20can%20keep%20finding%20enough%20inspiration%20to%20keep%20our%20meals%20exciting,%20so%20wish%20me%20luck!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EIn%20a%20large%20pan,%20fry%20the%20bacon%20until%20it%20renders%20the%20fat.%3C/p%3E%3Cp%3EThen%20add%20the%20potatoes%20and%20onions%20and%20cover%20and%20cook%20for%20a%20while.%3C/p%3E%3Cp%3EWhen%20the%20potatoes%20are%20half%20cooked,%20add%20the%20corned%20beef%20and%20mustard%20and%20stir%20well.%20I%20did%20not%20add%20any%20salt%20because%20the%20bacon%20and%20corned%20beef%20were%20salty%20enough.%20So%20test%20your%20mixture%20before%20adding%20any%20salt.%3C/p%3E%3Cp%3EKeep%20frying%20till%20the%20mixture%20is%20dry%20and%20starting%20to%20crisp%20up.%3C/p%3E%3Cp%3ETurn%20the%20gas%20off%20and%20start%20plating%20this%20mixture%20into%20ramekins,%20leaving%20enough%20space%20on%20top%20for%20the%20egg%20and%20cheese.%20I%20got%207%20ramekins.%3C/p%3E%3Cp%3EDrop%20a%20raw%20egg%20on%20the%20top%20of%20each%20ramekin%20and%20sprinkle%20with%20a%20little%20pepper%20(I%20again%20avoided%20salt%20because%20of%20the%20processed%20meats)%3C/p%3E%3Cp%3EWhile%20the%20original%20recipe%20calls%20for%20broiling,%20I%20set%20the%20microwave%20on%20grill%20and%20grilled%20the%20ramekins%20for%204%20minutes.%3C/p%3E%3Cp%3EAs%20soon%20as%20the%20eggs%20look%20cooked%20well%20enough%20for%20your%20taste%20(we%20like%20them%20a%20little%20runny)%20take%20the%20ramekins%20out.%3C/p%3E%3Cp%3ESprinkle%20cheese%20on%20top%20of%20the%20eggs%20and%20grill%20again%20for%202%20minutes%20or%20until%20the%20cheese%20melts.%3C/p%3E%3Cp%3EServe%20hot.%3C/p%3E%3Cp%3EWhile%20this%20seems%20like%20a%20classic%20breakfast%20combination,%20we%20had%20this%20quite%20happily%20for%20dinner.%20The%20dh%20loved%20it%20with%20toast%20and%20I%20just%20had%20it%20with%20a%20salad%20on%20the%20side.%3C/p%3E%3Cp%3EKim's%20Tips:%3C/p%3E%3Cp%3EFrom%20what%20I%20saw%20today,%20it%20would%20be%20better%20to%20make%20a%20well%20in%20the%20centre%20of%20the%20mixture%20in%20the%20ramekins.%20The%20yolk%20will%20then%20stay%20in%20the%20center.%20If%20the%20yolk%20does%20not%20directly%20touch%20the%20sides%20of%20the%20ramekin,%20the%20risk%20of%20it%20splitting%20open%20is%20minimised.%3C/p%3E%3Cp%3EDo%20not%20press%20the%20mixture%20in%20tight%20into%20the%20ramekins,%20you%20will%20lose%20texture%20when%20the%20ingredients%20get%20smashed.%3C/p%3E%3Cp%3EYou%20can%20cook%20the%20mix%20as%20long%20as%20you%20like%20before%20gri
