I was reading the NY Times Front Burner section this morning and an article entitled “Large Cookbooks Require Some Time to Digest” caught my eye. The main theme is those beautiful, fantastically photographed, large format cookbooks are great for your coffee table but unrealistic for you to prepare the recipes found within. Created by master chefs, in well staffed kitchens, requiring any amount of top shelf ingredients; they are beyond most of our abilities and frankly ambitions. Yes, I am as guilty as the rest of you; having numerous dust collectors on my bookshelves by known kitchen magicians like Charlie Trotter and Thomas Keller’s The French Laundry Cookbook. Great books, totally unused. I once asked Julia Child why her recipes were so damn complicated; she told me, “if they weren’t so damn complicated, they wouldn’t be so damn good”.
The main reason we created emealsforyou.com, our meal planning and recipe, interactive website was to provide the everyday cook with great, easy, attainable meals. Meals that their families will truly love, and they will be proud to serve to company. The average working person struggles with what to prepare, usually in a hurry, for their meals. We have created the website with over 1,000 recipes and meal plans to take the struggle out of meal preparation. Most of our suggestions can be made within a half hour of getting home from work, with ingredients they can find in their pantries and refrigerators.; or as Jamie Oliver would say, “Easy Peszy”.

salt and pepper to taste
Allow butter to soften; mince garlic and cilantro and blend into the softened butter. Place the butter in plastic wrap, roll into a log and set in the refrigerator to firm up. Cut a pouch into the chicken breast on a diagonal about 11/2 inches wide and 11/ inches ‘deep. Stuff a Tb of the butter into each pouch. Pour a little of the olive oil over the breasts and salt and pepper them to taste. Heat grill to high temperature then cook the breast 10 -15 minutes, until juices run clear.
Note: garlic butter is also great on steaks and burgers.
