Apple Filo Bundle

We had a dinner party this weekend; as the weather was cold I was thinking comfort food. I stopped by the local Panera and picked up a bunch of their sourdough pot loaves, and decided to make Beef Bourguignon and a Caesar salad. Pretty much a great meal that takes the minimum time to put together and is always a welcome treat for the guests. With the Bourguignon in the oven simmering away, my thoughts turned to dessert. What could I make with product on hand and keep the French theme going.

This elegant dessert is a quick and easy alternative to an apple pie but with at least twice the image appeal. I hate working with filo dough but this one goes together fast enough that you are finished just about the time you begin talking to yourself about the filo. Don’t worry if the filo cracks, as you are putting three layers together and it won’t make the end result any different.

Preheat oven to 375 degrees. Cut apples into ¾ inch dice. Melt butter in a large sauce pan, add apples, cranberries, brown sugar and cinnamon and cook until apples are just tender. Add the brandy, off the flame, light brandy and cook until the flame subsides. Continue to cook until most of the liquid is reduced.

Place a sheet of the filo on a flat surface, cut into 1/3 strips, lengthwise; melt butter and brush on one piece of the filo. Place a second piece on top of the first and brush on more butter. Finish with the third piece and brush with the butter. In an 8 inch springform pan place the layered filo in the center of the pan extending over the side and down. Continue the process with the remaining filo until the entire bottom of the springform is covered. Spoon the apples on to the filo and spread evenly. Fold the sides of the filo over the apples and twist the filo. Repeat until all the filo is covering the apples. Brush remaining melted butter over the entire bundle. Place in middle of oven for 35 – 45 minutes until golden brown. Remove from oven, cool and sprinkle top with powered sugar.
