Carrot Cake
Once a quarter I start off my post with, we are heading to New Jersey. So it is that I find myself preparing for another short trip to NJ. As is the custom I ask in advance what foods, including desserts, the gang back there would like to have for our many family and friends’ dinners. As is the case my brother-in-law always asks for a carrot cake, it should be noted that Porterhouse steaks on the grill, Caesar salad and small plates are also always on hit his list.
I have been making this recipe for more than 30 years and it always works out great. Whether it is mid-winter or a hot summer night, this dessert seems to be the go to dessert.

- raisins, golden
Cream sugar, eggs and oil.
Mix in flour, baking soda and powder, cinnamon and salt. Add grated carrots, nuts and raisins.
Bake in greased tube pan or (2) 9 inch cake pans for 40- 50 minutes at 350 degrees.
Cover with cream cheese icing. *
