Cuban Pininis
Cooler weather in the Ohio Valley calls for a warm, comfort food for lunch. After a morning of shopping and errands we settled down with a great lunch, not just a sandwich; more like an adventure. While this recipe takes a little pre-planning for the ingredients, it is well worth the added effort. If comfort is spelled grilled cheese in your home this will become the comfort plus in your arsenal of non-boring treats for your family.

dill pickle slices
zLayer thinly sliced pork roast, ham, cheese slices, and dill pickle slices on four pieces of bread. Spread other pieces of bread with mustard. Butter both sides of sandwich and cook on panini grill until cheese is hot and melted.
Note: no panini grill; use a grill pan with a heavy pan on top to hold the panini down or just cook it in a frying pan like grilled cheese sandwiches. Shown in picture with corn and pasta with herbs.
