Recipe of the Week – Dejon Salmon

February 9, 2016 at 1:38 pm

From the Fish Entrée Collection at emealsforyou.com

I made this salmon on Saturday; heeding a request for a lighter dinner after a so so movie. This is very easy to make and cooks in about 10 minutes. The panko adds crunch while the mustard gives the salmon a little kick.

This is perfect for a lite dinner or served over a green salad with a nice vinaigrette. Cooking for one or two? Make several and freeze the extras before cooking.
