I made this salmon on Saturday; heeding a request for a lighter dinner after a so so movie. This is very easy to make and cooks in about 10 minutes. The panko adds crunch while the mustard gives the salmon a little kick.
This is perfect for a lite dinner or served over a green salad with a nice vinaigrette. Cooking for one or two? Make several and freeze the extras before cooking.

Spread the mustard equally over the top of the filets. Place the panko, cilantro, lemon zest, lemon juice, salt and pepper and the olive oil in a food processor. Pulse until mixed well. Spread the mixture on the top of the fillets. Place the filets in a pre-heated 350 oven until the breadcrumbs begin to brown, 8 -12 minutes depending on the size of the fillets.
May be frozen before baking.
