Garlic Shrimp with Cherry Tomatoes
Our friends, who are moving to Idaho in a month, are staying with us prior to the move. This is no problem for me in the kitchen as growing up we had friends in and out of our house at dinnertime most nights. It was unusual to sit down to eat with just our immediate family. My father used to say, just throw another potato in the pot. In this case it is a few more shrimp but it is worth the extra to have friends around.
As the recipe specifies this is good as an appetizer, we have served it many times for small plates. The recipe is so easy and quick that having it for dinner is a fast, last minute meal. I usually serve it over homemade pasta when serving it as a dinner. Add a salad and you have restaurant quality meal at home in minutes.

Heat the olive oil in an oven-proof pan; add the shrimp, and chopped garlic. Sauté for 3 minutes, until the shrimp begins to color. Remove from heat, add the cherry tomatoes, white wine and garlic chili sauce and place in a pre-heated 350 degree oven for 5 minutes. Remove from oven and swirl in the butter until melted; add cilantro and salt and pepper.
Note: Serve on toast points, or over rice or pasta as an entrée.
