Pear, Walnut and Blue Cheese Salad
We are back in Lawrenceville doing some work on my mother-in-law’s house and cooking up a storm in the kitchen to “keep our energy level up.” One of the hard parts of meal planning is to come up with different salads to go with the meals for an extended timeframe. Tonight we will have the Pear, Walnut and Blue Cheese Salad, having moved on from the Wedge Salad of yesterday. Combining the fresh flavors of the pear, the tartness of the lemon dressing on the lettuce with the sweetness of the walnuts and the honey and the saltiness of the blue cheese, makes this a good start to any meal.

Place lettuce leaves in a bowl and toss with lemon juice and add salt and pepper to taste. Arrange on plate. Cut pear as thinly as you can and arrange on the lettuce. Place walnuts around top, and put dollops of the blue cheese on top. Drizzle with honey. Serve very cold.
