Phyllis’ Fabulous Potato Casserole

It is a difficult task to write a blog just before Easter. Not because there isn’t anything to write about; just the opposite, there are just too many great recipes to choose from. I thought about putting the Carrot Cake recipe out there again, or maybe the Lemon Tart recipe, all of which I will be making for our Easter dinner. These potatoes have become the go-to potato for our Easter and many other meals. This recipe has been in our family for as far back as I can remember. It appears several times a year and is usually the first dish that completely disappears. Make a double batch if you want to ensure there will be some left to go with the leftover ham.

Melt butter and pour into a large bowl; add potatoes,onion, salt, cheese, sour cream and the cream of chicken soup. Mix well, pour into a 9 X 13 baking dish, sprinkle bread crumbs over the top and drizzle with the remaining 4 Tb of melted butter.

Cover with foil and bake at 350 degrees for 40 minutes, remove foil and bake an additional 10 minutes to brown the top.
