Roasted Italian Potatoes
Tired of the same old french fries, pasta or rice? Me too! Sometimes you just want something simple but a little different to add to your dinner menu. I was talking to a friend about “Chefs”, a restaurant in Buffalo New York that is famous for their baked spaghetti and I guess the my mind just stayed in the Italian mode. There is something special about the combination that makes the whole meal into a festive occasion.
P.S. Use the leftovers in a roll with a hot dog, add some mustard and you will have the classic Italian Hot Dog served at the Casino restaurant in “the burg” 20 years ago.

Cut quartered potatoes, skin on, in half again, crosswise. Place first 8 ingredients in a large bowl and toss. Put remaining 1 Tb of olive oil in a large oven-proof frying pan. Sauté until lightly brown. Place pan in a pre-heated 350 degree oven and roast for 25 minutes, until tender and brown. Adjust salt and pepper to taste. Serve.
