Shrimp Dip
Whenever we decide to have a small plates night the discussion always is, ” how many and which ones”. No matter how many times we entertain we always try to have new dishes for our guests. The other night the topic of shrimp dip over shrimp cocktail came up. We opted for the shrimp dip which takes just a few minutes to put together and is always a group favorite. Serve it with some good crackers or toast points.
This is one of those appertizers that you have to put on the table and then stand back; so as not to get run over.

Chop shrimp into ¼ inch pieces. Heat butter in a sauce pan; add the shallots, red pepper, garlic and sauté until soft. Add in the shrimp, bay seasoning, garlic chili sauce, cream cheese and heat until blended and melted. Add salt and pepper to taste. Stir in the cilantro.
May be served hot or at room temperature on crackers or toast points.
