Spaghetti Sauce
We are back from our NJ weekend. As is usual, we had tons of laughs and good times. The meals are always interesting, the cooking is the easy part, determining a good head count for who will be at the table is another story. This time was a little crazier than most, as we continually added place settings and took place settings away, depending on phone calls just prior to sitting down. Add to this I like to accommodate the carnivores as well as those who only eat fish. The downside is the head count fluctuation requires more cooking; the upside is there are plenty of great leftovers for lunch.
As we planned a side trip to visit my brother in Maryland, I made the spaghetti sauce on Friday morning for our Saturday dinner. The carnivores got meatballs and sweet sausage added to their sauce while the fish people had a fish sausage added to theirs. Cooking sauce for a long period really makes the sauce thick and the whole house smells great.

In a large, heavy saucepan put enough olive oil to just cover the bottom. Heat until just beginning to smoke; add pork and brown. Add onions, pepper and sauté until softened, put tomatoes in blender, blend until smooth and then into pot. Add paste, garlic and spices/herbs. Add salt and simmer uncovered over low heat for several hours, the longer the better. Stir every time you pass the pot. Pull pork from sauce and shred with forks, return pork to sauce. May need additional salt to taste May need additional salt to taste.
This recipe makes enough sauce for several large meals.
Freeze in plastic containers for individual use.
To add the meatballs and the sausage, skip the pork in the above recipe and cut the sausage into 2 inch pieces. Add the sausage in the recipe where you would the pork. For the meatballs, just add them to the pot, no need to brown them first, as they will cook for hours in the sauce.
