I was super excited when I read about the Avocado recipe redux challenge. The Recipe Redux members are being challenged to create the perfect summer get together dish using California Avocados. Avocados are in peak season from March through September, and are one of my favorite foods. Aside from their creamy deliciousness, avocados are nutrient dense, containing nearly 20 vitamins, minerals and phytonutrients. An average avocado contains approximately 250 calories and even though they are considered to have a high fat content; it is the good fat – so enjoy! If that’s not enough, they are have more potassium than a banana and have anti-inflammatory qualities. There are so many ways to eat avocados, from the obvious guacamole to using it in place of mayonnaise in a salad dressing and everything in between; needless to say that I will be posting more than one recipe this week! One of my favorite summer sides is a cool and refreshing caprese salad made with sliced fresh tomatoes from the garden with mozzarella cheese, drizzled with olive oil and topped with fresh basil. Since avocados work well as a cheese substitute, I decided to substitute the mozzarella with avocados – making it a perfect alternative for anyone with dairy sensitivities. I made these on separate serving plates, and it can easily be put together on one tray for a backyard barbeque.

Tomato & Avocado Caprese Salad

INGREDIENTS

INSTRUCTIONS

Cut the avocado into one half to one inch or pieces and slice the tomatoes

Fan the tomatoes on a plate and top with avocado pieces – if making separate portions use about 4 – 5 slices of tomato per salad plate

Crush (with garlic crusher) or finely chop the garlic and sprinkle over the tomato avocado mixture

Drizzle olive oil over the mixture

Roll the basil leaves and slice them and sprinkle basil “ribbons” over the tomatoes
