Recipe Redux Sowing Seasonal Seeds – Garden Veggie Burgers
INGREDIENTS
- 1 Tablespoon Olive Oil
- 2 Large Portobello Mushrooms
- 1 Medium zucchini
- 2 Carrots Diced
- ½ Minced onions
- 1 Clove garlic
- ½ Cup chopped walnuts
- 1 Tablespoon of ground flaxseed meal mixed with 3 Tablespoons of water
- ¾ Cup cooked and cooled quinoa
INSTRUCTIONS
Pre-heat oven to 350
Separately clean Portobello , then zucchini, then carrots and process each in a food processor to a finely chopped texture, set aside
Add onion and garlic to processor and pulse to a finely chopped texture
In a medium sized pan, add olive oil, and sauté mushrooms, zucchini, carrots, onions and garlic unitl they are soft (about 10 minutes) and place in a bowl
Place walnuts in food processor and process until finely chopped
Add walnuts to vegetable mixture
Add the flaxseed mixture and the quinoa, and mix well
Place in refrigerator for about 20 minutes ; enough so that mixture stays together.
Form mixture into patties
Line pan with parchment paper and bake in oven at 350 for 15 minutes
Then place on preheated gas grill for about 10 minutes and serve
