Zabaglione with Mixed Berries
Our new neighbors and their family came over on Saturday to have, what we call, a typical Italian meal. I made chicken cacciatore, only with a white wine sauce; a dish that was typical of the many Italian restaurants in the “burg”, an ethnic enclave in Trenton, NJ. Coupled with pencil points, penne pasta served with a red sauce, a chopped Italian salad and some homemade ciabatta bread; it brought back many memories of the great meals we had while growing up in the Garden State.
Staying with the Italian theme I made the zabaglione with mixed berries for dessert. This is a very easy, great dessert. The best part of the whole meal was that I was able to make it all in advance; then warm it up to serve. Especially nice as some of the guests were running 2 hours late.

Combine egg yolks and sugar in a bowl. Place bowl over hot water, add Grand Marinier, and orange zest and stir constantly until mixture thickens. Divide berries equally in four oven-proof bowls and pour the thickened mixture over the top. Place under the broiler for approximately one minute until lightly browned. Dust with powder sugar, melt marmalade in microwave and drizzle on top, serve.
