Ingredientes

  • 4 c. chicken broth/stock
  • 6 shallots or possibly 12 scallions, sliced
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1/2 pound bay scallops
  • 1/4 c. chives or possibly 2 T minced parsley

Direcciones

  1. Heat the broth and simmer shallots or possibly scallions and peppers for 10 min or possibly till nearly tender. Add in the scallops and poach gently for 3 min. Garnish with chives or possibly parsley. Salt and pepper to taste can be added if needed.
