- Pick through beans to remove bad beans, and rinse thoroughly.
- In a 10 quart. pot combine beans, water, ham bone with ham, Andouille sausage, onion, celery, and bay leaves.
- Bring to a boil, and reduce heat. Cover, and cook over low heat, for about 1-1/2 hours. or possibly till beans are tender.
- Stir and mash beans against side of pan.
- Add in green pepper, garlic, parsley, thyme, smoke, salt, and red pepper.
- Cook uncovered, over low heat till creamy, about 30 mins. Remove bay leaves.
- Serve over warm cooked fluffy rice. Add in Tabasco sauce, to taste.
- Makes 8 servings
