Ingredientes

  • 1 lb dry red beans (NOT kidney beans)
  • 3 quart water
  • 1 c. minced onions
  • 1 c. minced celery
  • 4 x bay leaves
  • 1 c. minced sweet green pepper
  • 4 tsp minced clv garlic
  • 3 tsp minced parsley
  • 2 tsp dry thyme, crushed
  • 1 tsp liquid smoke
  • 1 lb Andouille sausage, cut into 1/4 inch pcs
  • 1 x ham bone and small chunks of ham
  • 1 tsp salt
  • 1 tsp cayenne pepper
  •     Tabasco, if you like

Direcciones

  1. Pick through beans to remove bad beans, and rinse thoroughly.
  2. In a 10 quart. pot combine beans, water, ham bone with ham, Andouille sausage, onion, celery, and bay leaves.
  3. Bring to a boil, and reduce heat. Cover, and cook over low heat, for about 1-1/2 hours. or possibly till beans are tender.
  4. Stir and mash beans against side of pan.
  5. Add in green pepper, garlic, parsley, thyme, smoke, salt, and red pepper.
  6. Cook uncovered, over low heat till creamy, about 30 mins. Remove bay leaves.
  7. Serve over warm cooked fluffy rice. Add in Tabasco sauce, to taste.
  8. Makes 8 servings
