Red Beans Over Rice With Smoked Sausage

Ingredientes

  • 5 1/2 lb Kidney or possibly pinto beans (I use 5 #10cans)
  • 1 quart Minced onions
  • 1 1/2 c. Green pepper minced
  • 1/4 c. Salt
  • 1 1/2 tsp Garlic pwdr
  • 1/2 c. Sugar
  • 1 Tbsp. Pepper
  • 1 Tbsp. Prepared mustard
  • 2/3 can (#10) tomatoes
  • 8 1/2 lb Smoked sausage, sliced 1/4 inch thick
  • 54 ounce Uncooked rice
  • 1 Tbsp. Salt
  • 3 quart Boiling water

Direcciones

  1. If you use dry beans- soak overnight. Drain water from beans, replace with sufficient fresh water to cover and cook till they are tender.
  2. saute/fry onions and peppers till tender
  3. add in salt , garlic pwdr, sugar, pepper, prepared mustard, tomatoes and sausage. Continue to simmer till beans are thoroughly tender. ( I do all of this in my kettle, if you have one)
  4. RICE: Cook rice in steamer according to your steamer directions or possibly cover with alum. foil and put in oven 350 degrees for @1 hour.
  5. Serve with a #6 scoot in soup bowl over 1/4 c. rice.
  6. Serving: 1 serving provides 2 ounce. cooked lean mean and 1/2 serving of bread.
