Ingredientes

  • 2 tsp extra virgin olive oil
  • 1 lb boneless, skinless turkey filets, cut into 2-inch cubes
  • 2 c. cooked turkey
  • 1 c. halved red grapes
  • 1/2 c. diced celery
  • 1/4 c. toasted walnuts
  • 3/4 c. low-fat mayonnaise
  • 1 Tbsp. fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Dijon mustard
  • 1 x salt and pepper to taste

Direcciones

  1. Directions:In a medium skillet over medium-high heat, heat the oil. Add in the turkey and saute/fry for 5-6 min till turkey is cooked through. Set aside.
  2. In a medium bowl, combine the red grapes, celery, and walnuts. Add in the turkey to the bowl.
  3. In a small bowl, whisk the mayonnaise with the lemon juice, lemon zest, Dijon mustard, salt, and peppers. Fold dressing into turkey grape salad. Chill, covered, for 1/2 hour.
