Recently I had some guests visiting our home, it was our dear blogger friend Priya Ranjit akka and Ranjit anna. We had a lovely meet up and a good time together. It was lunch time so I made this spicy curry along with rice and radish (mullangi) sambar, tomato rasam and chicken fry to serve them. The menu sounds quite simple and my guests were so kind enough and relished my humble treat. It was all because of the power cut issue here in TN that made me plan for a simple menu. I had to prepare recipes without depending on the gadgets that work on electricity.

For the past couple of years, there has been a huge shortage in the power production in TN, this has hindered the lives of people much too much, I should and will call it a pest. Thankfully in Chennai it is just 2 hours; but its 8 to 15 hours a day in other regions of TN. It is such an unhealthy situation prevailing here, and in Chennai the 2 hours power cut timing will vary every month. This month it is 2 hours in the morning exactly 10 am to 12 pm, it has been a very big hindrance in my kitchen work. But still, instead of complaining I should be bit happy, because atleast here in Chennai we know the timings of the power cuts, but in other places there is no proper timings nor there is any prior information about them. These days we are so very dependent on gadgets and so when there is no power supply we almost become handicapped. I really pity the TN residents how I wish this problem gets resolved soon.

Okay, so now I had very little time left to prepare lunch and with no electricity I decided on a simple yet tasty menu which does not involve any grinding process. This minced meat recipe was just a savior recipe for me, its such a fuss free recipe and tastes so good, my guests loved it too. The spices and the mint leaves adds a special flavor to the curry. This red hot curry goes well as sides or as curry with rice, rotis, naan, dosa, idli etc.

INGREDIENTS

Serves 3 people

Total Preparation Time - 30 minutes

PREPARATION METHOD

Wash minced mutton in water well. Drain water and set aside.

Now place a cooker bottom on flame and pour 5 spoons of oil into it. After it heats up, add cumin seeds, cardamom pods (opened), bay leaf, cinnamon stick, star anise and saute for a few seconds. (See that the spices do not brown too much or burn)

Now add the slices onions and saute well on low flame until it turns translucent. Then add ginger garlic paste, salt and saute until the raw smell leaves.

Now add the chopped tomatoes, mint leaves and chopped coriander and saute.

Then add red chilli powder and saute until the tomatoes gets cooked and mixture turns into masala.

Now add the minced mutton and saute well until the masala gets mixed up well with the meat.

Now pour 2 cups of water or until the meat gets immersed well and there is 1 inch water above the meat.

Add salt if necessary and stir well.

Close the cooker with its lid and place the whistle/regulator after steam/pressure oozes out through the nozzle.

Cook for 15 minutes on low flame.

After the specified time, remove the cooker from flame and set aside until pressure drops.

Then open the lid and check if the minced meat has got cooked to perfection.

Serve!!

TIP 1: Reduce the spiciness according to your wish, I have made it very spicy.

TIP 2: You can make the same with minced chicken also, just take care to pressure cook it just for 5 minutes. Chicken gets cooked faster.

TIP 3: Washing the minced mutton could be really difficult. Place the minced meat in a colander or strainer and wash in running water. I usually mix up the minced mutton with turmeric powder and salt, set aside for a while and then wash it to get rid of microbes. You can try doing that too.

Super hot and tasty minced mutton masala is now ready!! Serve as sides with rice or any bread varieties!!
