Red Raisin Sauced Cornish Hens

Ingredientes

  • 1 pkt stove-top stuffing mix - (6 ounce)
  • 4 x Cornish hens - (to 5)
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 1 jar red currant jelly - (10 ounce)
  • 1/2 c. golden brown raisins
  • 1/4 c. butter or possibly margarine
  • 2 tsp lemon juice
  • 1/4 tsp allspice

Direcciones

  1. Mix stuffing according to package directions and stuff hens. Sprinkle with salt and pepper. Place trivet in crockpot. For a 3-1/2 qt pot, place hens on end, neck end down.
  2. In saucepan combine jelly, raisins, butter, lemon juice and allspice. Cook on low heat, stirring, till blended. Brush some of the sauce on hens in the pot. Brush hens once during cooking, if possible.
  3. Cover crockpot and cook on LOW for 5 to 7 hrs. Spoon remaining sauce over hens at serving time.
  4. This recipe yields 4 to 5 servings.
